- 120 grams 2% sharp cheddar cheese
- 72 grams (2 wedges) Light Laughing Cow Cheese
- 400 grams Non Fat Plain Greek Yogurt
- 525 grams Cilantro Lime Rice
Directions
- Cook the Beef
- In a skillet over medium heat, brown the ground beef until no longer pink.
- Add taco seasoning according to package instructions, along with the water it calls for. Let thicken, then set aside.
- Make the Rice
- Prepare cilantro lime rice in a rice cooker or on the stovetop using your favorite recipe.
- Mix the Filling
- In a large bowl, combine the seasoned beef, cheddar cheese, Laughing Cow cheese, and Greek yogurt. Stir until creamy and well blended.
