Energy Bites are perfect for a healthy quick snack or breakfast on the go. We have made these four times in the last 4 weeks.

It’s been a crazy year, with being pregnant and all the other things that come with life. I would come home from school and obviously feel a little tired and maybe on edge also, you know hormones.

My kids would get home and have a lot of emotions and since I was already tired I would lose it a little. Then we figured out they just needed a little snack when they got home. Which seems kind of silly, because I know the two at daycare get plenty of food.

Since, being home on maternity leave, I decided to make the bottom drawer of our fridge a snack drawer. The kids can reach it and get out what they want. I put in veggies, fruit, string cheese, Gogurts, lots of other stuff and these energy bites.

Greyson is a little dude and isn’t always the best eater and so I always worry he’s not getting enough calories and these have been the perfect snack for him and his siblings. They have been such a hit at our house we have been making them frequently and the kids love to eat them.

 

 

 

Ingredients

Peanut Butter & M&Ms
  • 1 cup rolled oats
  • 1/2 cup mini M&Ms
  • 1/4 cup ground Flax seed
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon kosher salt

 

 
 
Almond Joy
  • 3/4 cup rolled oats
  • 3/4 cup unsweetened coconut flakes
  • 1/4 cup milk chocolate chips
  • 1/4 cup chopped almonds
  • 1/4 cup flax seed
  • 2/3 cup almond butter
  • 1/3 cup honey
  • 1 teaspoon vanilla 
  • 1/2 teaspoon kosher salt

 

 

Oatmeal Raisin
  • 1 1/4 cup rolled oats
  • 1/2 cup milk chocolate chips
  • 1/4 cup flax seed
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1 teaspoon vanilla 
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cinnamon

 

 

 

Directions

  1. Stir everything together.  Stir all ingredients together in a large mixing bowl until thoroughly combined.
  2. Scoop into about 1 inch balls. I used a small cookie scoop, sometimes I roll them and sometimes I leave them in a rough ball shape so I don’t have to get my hands dirty. 
  3. Chill. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the balls are chilled.  
  4. Then I put them in little snack bags for the kids to grab.
  5. Serve.  You can eat them right away or refrigerate in a sealed container for up to 1 week. I heard you can freeze them for up to 3 months, but I haven’t tried that yet. Mine don’t last long enough, if you try it, let us know how that goes!
