I don’t why we wait to make these little gems each year. Easter just makes us think about eggs and this is the next thought but every time I make them, my family gets super excited! This needs to be made all the time!!

TIPS AND TRICKS

STORAGE: If you do have a few left (which I don’t think you will) place them in an airtight container and they should stay good for up to 2 days.

MAKE AHEAD: You can make it ahead the night before but just store the filling in a Ziploc bag and then fill the whites right before your party.

PERFECT EGG: First tip, I always boil a couple extra eggs just in case a couple crack. Make sure to boil the eggs for 12 to 13 minutes. Also, make sure the are cooled all the way, it makes it easier to remove the shell.

VARIATIONS: You can use a little bit of vinegar rather than the pickle relish to get that bite. Cheese would be such a great addition to a bacon, egg! You love a little spice? Add a pinch of red pepper flakes.

Deviled Bacon Eggs

Ingredients

  • 8 hard boiled eggs, cooled and peeled
  • 1/2 cup mayonnaise
  • 1 to 2 tablespoon pickle relish
  • 1 teaspoon Dijon mustard
  • salt and pepper, to taste
  • 3 slices bacon, cooked and crumbled
  • 1 tablespoon chives, finely diced

Instructions

  • Slice the hard boiled eggs in half lengthwise. Remove the yolk to a small bowl with a spoon and place the egg whites on a plate.

  • Mash the yolks with a fork and add the mayonnaise, pickle relish, mustard, salt and pepper. Add chives. Stir everything together until it's creamy.

    Use a spoon to add a portion of the deviled egg mixture back into the hole of each egg white.

  • Garnish with a generous amount of bacon bits and top with a sprinkle of chives.
