Let’s get fancy! This Bacon Egg Salad Crostini is super easy to make and perfect for any party or a delicious snack!

I have Easter on my mind! I’m in charge of the family Easter egg hunt. So I guess eggs are on my mind.  We do use plastic eggs for our hunt but I know there’s going to be a lot of dyed eggs that will need to be eaten! And then there’s the fact that I just love a good old egg salad sandwich. 

 

This recipe is great for Easter and all the eggs but would be great for any party that you have going on. Heck, it would be perfect for a snack!

 

 

 

TIPS AND TRICKS

STORAGE: The egg salad will last up to 2 to 3 days in an airtight container stored in the fridge.

MAKE AHEAD: Yes you can! You will have to stir it for consistency.

MAYO? You can also use Miracle Whip for a different little twist.

SPICE: If you want to spice it up, add a dash of red pepper flakes.

CHEESE: You can also add a 1/4 cup of Feta for a different twist.

Ingredients

  • 1 thin, long baguette
  • 2 to 3 tablespoons extra-virgin olive oil
  • ¼ cup chopped cooked bacon
  • 6 hard-cooked eggs peeled and chopped
  • ¼ cup mayonnaise
  • 2 tablespoons minced cucumber
  • 1 tablespoon minced fresh dill
  • 1 teaspoon minced onion

Instructions

  • Preheat the oven to 450 °F.

  • On a cutting board, cut the baguette into 1 1/2 inch thick slices.

    Place the slices of bread onto a large non-stick baking sheet. Brush the extra virgin olive oil on each side of the crostinis.

  • Bake the slices for 6 to 9 minutes, or until slightly crisp and golden on top.

  • While the crostinis are baking, place the cut hard-boiled eggs, bacon, mayonnaise, cucumber, fresh dill, and onion, into a mixing bowl and combine.

  • Spoon 1 tablespoon of the egg salad mixture onto each baked crostini and serve immediately. Garnish with dill.

  1. I love the egg salad crostini. I would substitute the pork for beef or turkey bacon instead myself. I think it’s simple and elegant. It makes it a nice finger food for a get together. To top it off it’s inexpensive! It’s a win all around! Thanks for sharing your recipes. Shalom
