Are you ready to take a delicious buttermilk cornbread recipe to another level? This from scratch recipe beats it’s competition with roasted fresh corn, buttermilk, butter, and cornmeal. The cherry on top is the honey garlic sauce!

Maybe it’s because I have a food blog but I love to watch the Food Network. The other night we were watching the grudge match show. They were trying to come up with the best recipe, using the ingredients that was given to them, and make a Instagram worthy dish.

One chef came up with a cornbread with roasted corn and a lip smacking sauce. I thought that’s something I want to play with for the blog. I searched and searched to see if I could find her recipe for inspiration but alas, I couldn’t find it.

This dish wouldn’t get out of my mind!!! This is what I came up with and I think you love it! The cornbread is so lovely on it’s own but the sauce just gives it an edge.

 

 

Buttermilk Cornbread with Honey Sauce

Buttermilk Cornbread with Honey Sauce

Ingredients

  • 2 cups of roasted corn
  • 1 ½ cups cornmeal
  • 1 cup flour
  • ⅓ cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 1 egg
  • 6 tablespoons butter, melted and divided

Instructions

  1. Preheat oven to 425 degrees F. Place an 10 inch cast iron skillet in the oven.

    In a skillet, melt a tablespoon of butter, add either fresh or frozen corn over a medium heat. Stir and cook until the corn is toasted. It will be about 5 to 10 minutes.

    In a large bowl, combine cornmeal, flour, sugar, baking powder and salt.

    In another bowl, whisk together buttermilk, egg and 3 tablespoons butter. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add the corn and combine well.

    Remove skillet from the oven and add remaining 3 tablespoons until heated through, about 1-2 minutes.

    Working carefully, immediately scoop the batter into the hot skillet. Place into oven and bake for 25-30 minutes, or until a tester inserted in the center comes out clean. Let cool 5 minutes.

    Serve warm.

 

Honey Garlic Sauce

Ingredients

  • 1/4 cup butter melted
  • 1/4 cup honey
  • 2 to 3 cloves garlic minced
  • 2 tablespoons fresh squeezed lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon fresh chopped parsley

Instructions

  1. In a small saucepan, melt the butter over low-medium heat. Add the honey and garlic; whisk until the honey has melted through the butter and the mixture is well combined. Pour in the lemon juice (or vinegar), season with salt and add parsley.
