Peach, Chicken and Caramelized Corn Salad

This is the ultimate dinner salad that’s anything but boring. This peach, chicken and caramelized corn salad is loaded with flavor! This beauty is going to become your new favorite salad!

Since they’re all so many fresh ingredients available right now, it seems a no brainer to use the yummy produce. This salad is perfect for lunch or dinner. How fun would it be to go to the farmer’s market and pick up some peaches and corn to create this masterpiece? This salad is so simple but the flavors are so intense!

Ingredients
  1. 1 1/2 pounds boneless skinless chicken tenders (or breast cut into 1 inch thick pieces)
  2. 2 tablespoons extra virgin olive oil
  3. salt and pepper
  4. 1 bunch of green onions, chopped
  5. 4 ears corn kernels, removed from cob
  6. 1 pinch crushed red pepper flakes
  7. 6 cups mixed salad greens
  8. 1-2 peaches, sliced
  9. 1/3 cup feta
  10. 1 avocado, sliced
  11. 1/2 cup cashews
  12. HOT BACON VINAIGRETTE
  13. 4 slices thick cut bacon, chopped
  14. 4 tablespoons white wine vinegar
  15. 4 tablespoons extra virgin olive oil
  16. 2 teaspoon honey
  17. salt and pepper
Instructions
  1. 1. In a medium bowl, toss together the chicken, 1 tablespoon each of olive oil and a pinch each of salt and pepper.
  2. 2. Heat a large skillet over medium high heat. Add the chicken and sear 3-5 minutes per side until the chicken is golden and cooked through. Remove from the skillet.
  3. 3. To the same skillet, add the remaining tablespoon of olive oil. When the oil shimmers, add the green onions and cook 1 minute until fragrant. Add the corn, a pinch of crushed red pepper flakes, and season with salt and pepper. Cook 5-8 minutes or until the corn has browned lightly and caramelized. Remove from the heat.
  4. 4. In a large salad bowl, combine the greens, peaches, chicken, and corn. If using, sprinkle on the cheese and cashews. Spoon the bacon vinaigrette overtop (recipe follows), gently tossing to combine. Finish with avocado. Enjoy!
  5. HOT BACON VINAIGRETTE
  6. 1. Heat a large skillet over medium high heat and cook the bacon until crisp. Drain off bacon grease. To the bacon in the skillet, add the vinegar, olive oil, honey, and a pinch each of red pepper, salt, and pepper. Drizzle the warm vinaigrette over the salad.
