Sunday Pork Roast

I have not been shopping in a long while and were trying to use all the things we have in our fridge and cupboard to get some more fresh ingredients.  Also because it’s almost Sawyer’s birthday and we’re going to need room in the fridge for his cake.we have roasts out in our big freezer so I decided to use that yesterday.

Another thing I do when I buy for recipes is, I tend to over buy just in case. Which also leaves me more for future recipes I make on the fly. Everyone loved this dinner, even my pickiest eater.

 

 

Ingredients 

  • 3 to 4 pound pork shoulder roast
  • 2 Tablespoons vegetable oil
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 onion, quartered
  • Small bag of baby carrots
  • 1 1/2 cups chicken broth

 

 

Directions

  1. Preheat oven to 450 degrees.
  2. Rub oil onto pork roast. In a small bowl, stir together salt, pepper, garlic powder, onion powder, and paprika. Sprinkle seasoning mixture onto pork roast. Place fatty side up in a roasting pan or large cast iron dutch oven.
  3. Roast, uncovered, in the 450 degree oven for 30 to 45 minutes. Reduce the oven temperature to 350 degrees and continue cooking an additional 1 hour.
  4. Remove roast from oven and place the onion chunks, and carrots around the meat. Pour chicken broth on vegetables. Season vegetables with salt and pepper. Sprinkle parsley on top.
  5. Cook an additional 1 to 1 1/2 hours, or until vegetables are tender and meat shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.
