Roasted Chicken is the easiest dinner ever, just throw it together with some veggies and you have an easy win.

This is literally Greyson’s favorite food! He asks for this every single week. When he doesn’t ask for pizza, hot dogs or chicken nuggets, I’ll take that as a win. His new thing he tells me is, “Hey Mom, you’re a good maker.” Which means I’m a good cook, and it literally makes my day every single time.

 

This is a healthy option, I know you can buy an already roasted chicken from Costco for $5 but if you don’t eat it right away then I feel like I’ve wasted the goodness. You can buy two raw chickens for ten dollars cook them yourself, which I love to do.

 

 

 

Ingredients

  • Whole chicken, Giblets removed and excess fat trimmed
  • 1 celery stalk
  • 1/2 onion, quartered
  • 2 whole garlic cloves
  • 6 tablespoons of butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon parsley

 

 

Directions

  1. Preheat the oven to 350 degrees.
  2. Place 4 tablespoons butter, onion, garlic and celery in the cavity. Rub the remaining butter on the skin, sprinkle garlic powder, onion powder, salt, and parsley evenly over the top of the chicken. 
  3. Bake for 1 hour and 15 minutes, or until chicken reaches 165 degrees. Let sit for 10 minutes before cutting and serving
