Homemade Tomato Soup
Nothing is better in cold weather than grilled cheese sandwiches and homemade tomato soup!
We had a lot of tomatoes this year. We made everything from marinara to tomato puree to tomato soup! When I was pregnant with Greyson, I craved tomato soup and grilled cheese. He normally won’t eat grilled cheese, but I told him that and he ate every bit of this! This recipe is a rich and delicious creamy tomato soup!
- 2 tablespoons olive oil
- 1/2 large onion finely minced
- 2 cloves garlic finely minced
- 1/2 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 17 oz. tomato puree
- 5 cups beef stock
- 2/3 cup half and half
Heat a large pot over medium heat. Add the olive oil.
Add the onions and garlic and sauté until the onions are soft and the garlic is fragrant.
Add the basil, salt and pepper.
Add the tomato puree and stir well to combine. Continue cooking the mixture over medium heat for about 5-7 minutes or until the tomato darkens in color slightly.
Add the beef stock and stir to combine.
Cook well over medium-low heat for about 15-20 minutes.
