This is my most favorite cake ever, Caramel Apple Spice Cake will literally knock your socks off. I love to make and eat this cake!

It’s actually so good you can’t stop eating and picking at it. Whether you’re picking out the apples, the caramel or the frosting. This cake is a serious crowd pleaser. I made this twice in the last 2 months because you eat it and then it’s good for days. It gives you all the fall feels.

 

 

Caramel Apple Spice Cake

Ingredients

Cake
  • 3 cups all-purpose flour
  • 2 tsp ground cinnamon 
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice 
  • 1 tsp vanilla
  • 1 tsp baking soda 
  • 1 tsp salt
  • 3/4 cup vegetable oil
  • 1/3 cup plain yogurt
  • 3 tablespoons milk
  • 1 1/2 cups sugar
  • 3 large eggs
  • 3 green apples cored and chopped, about 3 cups
Browned Buttercream
  • 3/4 cup room temperature browned butter
  • 1/3 cup heavy cream
  • 1 1/2 to 2 cups powdered sugar
  • 1 tablespoon vanilla extract
Caramel
  • 1 cup brown sugar
  • 5 tablespoons butter
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1 pinch of salt

 

Caramel Apple Spice Cake

Directions

For the Cake:
  1. Sift and whisk together the dry ingredients
  2. Mix together the wet ingredients until well combined in a large bowl or stand mixer
  3. Gradually mix in the dry ingredients until just combined
  4. Fold in the apples
  5. Divide the mixture evenly into two 8″ pans, which have been buttered and floured. I also put parchment paper in the bottom as well.
  6. Bake at 350F for approximately 45-50 minutes or until centers are done.

 

For the Buttercream:
  1. Add 3/4 cup of butter to a pot and cook over medium low heat stirring occasionally until the milk solids in the butter caramelize and darken. Be careful of splatters!
  2. Once the butter has darkened transfer to a bowl and chill until almost solid. The brown butter will be slow to cool and thicken back up so make sure to do this step in advance.
  3. Cream the butter in a standing mixer fitted with a paddle attachment.
  4. Add in the salt and powdered sugar gradually and beat together.
  5. Add vanilla and cream until desired consistency is achieved.

 

For the Caramel:
  1. Combine ingredients in small pot and stir together so they’re mostly dissolved.
  2. Place over medium-low heat and cook for 7-8 minutes leaving it alone until it bubbles and thickens.
  3.   Remove from heat and stir in the vanilla then transfer to a bowl to cool, you’ll want to cool it before putting it on the cake so it doesn’t melt the frosting.
