Crazy Day Soup is perfect for those busy days when you don’t know when you will have time to make dinner. This requires little effort. Every bite will be filled with savory broth,  pasta, and loads of veggies and beef.

I love soup! It doesn’t matter what season it is. It seems to be the perfect solution.  Busy Day Soup is  one of the best because you can throw all the ingredients into the pot and let your stove work its magic.

When I want a simple, delicious meal, I turn to this soup recipe. Serve it with a buttered roll or a nice tossed salad.  

 

 

WHAT VEGGIES SHOULD I USE?

You can use change the veggies that we have in our ingredient list. Fresh veggies can be a perfect choice. If you have a bag of frozen vegetables in the freezer that sound tasty, use them instead or any can of veggies you have in your pantry.

 

 

WHAT DO I DO WITH THE LEFTOVERS

Soup is a great thing for work lunches or even school. You can use a thermos. I think soup get better the longer it sits in the fridge. 

You can freeze this soup. The vegetables will change a bit in texture as they thaw, but the flavor of this soup is still amazing and tasty. Pasta, can get mushy, so if you know you are going to freeze, cook to al dente. 

 

Can I Make it in the Slow Cooker?

You can also make Crazy Day Soup in the slow cooker. Cook the ground beef first on the stove.  Add all the ingredients except the pasta to the slow cooker. Cook on low heat for 6 hours. Add in the uncooked pasta when there is only 30 minutes left of cooking time.

 

 

 

Ingredients

  • 1 lb. ground beef
  • 3 to 4 garlic cloves, minced
  • 1 package onion soup mix
  • 1 3/4 cup mixed frozen vegetables
  • 4 cups chicken broth
  • 1 quart can diced tomatoes or a bottle of salsa
  • 1 cup short cut pasta, uncooked

 

directions

  1. In a large soup pot, brown ground beef. Add garlic and cook for a couple of minutes. Drain fat.
  2. Pour in chicken broth, onion soup mix and tomatoes with juice. Stir occasionally. Simmer for 1 hour on medium low.
  3. Add pasta and frozen vegetables. Cook 15 minutes longer on medium heat. Serve hot.

Notes

If soup is too thick, add you want it thinner you can add more water or broth to thin out. On the same note, if it’s too thin, you can thicken it up with a tablespoon of corn starch!
