CREAM CHEESE CORN CASSEROLE

 

Skip the canned cream corn this year and make it from scratch right in the oven – This Cream Cheese Corn Casserole is so rich and creamy and unbelievably easy to make with just 5 ingredients!

 

 

 

While you might think of creamed corn as the food that comes in a can, this cream cheese corn will have you thinking about creamed corn in an entirely new way.

 

Frozen corn on its own can be tasty, but it’s not exactly an inspired side dish. If you put it in a casserole with butter, whipping cream, sharp cheese, and cream cheese, though, the corn transforms into a vegetable dish that the whole family will love.

 

 

 

 

INGREDIENTS

  • 1 (8-ounce) package whipped cream cheese
  • 4 tablespoons butter
  • 1/3 cup whipping cream
  • salt and black pepperto taste
  • 1 (18-ounce) bag frozen sweet cornthawed
  • 1 cup shredded sharp cheddar cheese
  • chives, diced for garnish

 

INSTRUCTIONS

    • Preheat oven to 350°F. In a medium pot set over low heat, melt cream cheese and butter. Stir in whipping cream until mixture is smooth and creamy. Stir in salt, pepper, and corn.
    • Pour corn mixture into an 8- by 8-inch square (or 2-quart) baking dish. Sprinkle with grated cheddar. Bake for 20 minutes or until golden and bubbly.
