Caribbean Jerk Chicken and Cauliflower Rice
 
 
 
At our house, we are trying to make a lifestyle change into eating more healthy foods. I have been trying to find foods with more flavor and more healthy ingredients. Problem is that I am a picky eater, it is truly a conundrum. This recipe had a lot of things that I don’t love to eat, peppers being a big one for me. This was so good, I didn’t even notice they were in there. Give this bad boy a try!
 
 
 
 

Caribbean Jerk Chicken and Cauliflower Rice

Ingredients

 
  • 2 chicken breasts, cut into strips
  • 2 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. fresh-squeezed orange juice
  • 1 Tbsp. brown sugar, packed
  • 1 Tbsp. reduced-sodium soy sauce (green top)
  • 2 Tbsp. green onions, chopped
  • 1 Tbsp. jalapeño, seeded and finely chopped
  • Lime wedges, if desired
  • 1 tsp. garlic, minced
  • ¼ tsp. onion powder
  • ¼ tsp. dried thyme
  • ½ tsp. paprika
  • ⅛ tsp. allspice
  • ⅛ tsp. nutmeg
  • ¼ tsp. cayenne pepper
  • ⅛ tsp. salt
For the Cauliflower Rice:
  • 1 Tbsp olive oil
  • 1 green bell pepper, chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 cup fresh pineapple, chopped
  • 4 cups cauliflower rice
  • 1 tsp. garlic, minced
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ⅛ tsp. cinnamon
  • ¼ cup fresh-squeezed orange juice

 

 
 
 

Directions

 
  1. To make the marinade for the chicken, in a Ziploc back mix together all of the ingredients for the chicken.
  2. To make the cauliflower rice, heat a large skillet over medium heat and drizzle in olive oil. Add bell pepper, jalapeño, and pineapple and sauté until tender, about 3 to 5 minutes. Then add cauliflower rice and stir in garlic, salt/pepper, cinnamon, orange juice. Cook for about 5 minutes. Remove from heat.
  3. Cook chicken on medium-high in a skillet. It will take about 2 to 3 minutes on each side. Don’t cook too long you don’t want the chicken to dry out.
  4. In a small bowl, bring the reserved marinade to a boil over medium-high heat. Reduce heat and simmer, uncovered, for about 10 minutes.
  5. Pour glaze over top of the chicken and serve over cauliflower rice with lime wedges if you want. Enjoy!

  1. Was scrolling through the Grand Social when your post caught BB’s eyes. Truthfully, Babushka isn’t into (hot) spicy foods, but that cauliflower rice in the title made me look! Will be pinning this for sure.
