Baked Gnocchi

This Baked Gnocchi is a dish that will warm your heart and become one of your favorites. It’s so easy to make and perfect for one of those nights that you don’t have even another minute. It’s a incredible tasting dish.

Gnocchi is my favorite! If I ever come across a recipe with gnocchi in it , I immediately want to make it! Those fluffy little potato pillows make my heart sing!

This recipe doesn’t call for a lot of ingredients, matter of fact, you probably have most of them in your pantry. Easy to make, just a few ingredients and one pan! How can it get any better than that!

 

 

 

Baked Gnocchi

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 lb. ground beef
  • 1 small onion, diced
  • 3 to 4 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 1 (24-ounce) jar marinara sauce
  • 6 cups cooked gnocchi
  • 1/4 cup freshly grated Parmesan
  • 3 tablespoons chopped chives
  • 8 ounces fresh mozzarella, torn into pieces

 

 

DIRECTIONS:

Preheat oven to 425 degrees F.  Lightly oil a 9 x 13 baking dish or coat with nonstick spray.

Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.

Stir in garlic until fragrant, about 1 minute.

Stir in vinegar, scraping any browned bits from the bottom of the pot.

Stir in marinara sauce. Bring to a boil; reduce heat and simmer until flavors have blended about 5 minutes. Stir in gnocchi, and Parmesan until well combined, about 1-2 minutes.

Spread gnocchi mixture into the prepared baking dish; top with mozzarella. Place into oven and bake until bubbly, about 20-25 minutes. Let stand for 5 minutes.

Serve immediately, garnished with chives, if desired.
