Keto Beef Stew

Melt in your mouth beef, loaded with veggies and packed with flavor, this Keto Beef Stew is made in one Pot, takes one afternoon, and is one tasty dish!





I know it’s getting warm outside and usually don’t think about making stew. Beef Stew is a quick way to feed your whole family without heating up the house. My Lisa has been going strong on Keto for about a month and a half. This means I’m on the lookout for new recipes that I can try. This is a perfect way to support her on her quest and feed the rest of the family!






2 lbs beef stew meat, cubed
salt and pepper, to taste
2 Tbsp olive oil
8 oz. mushrooms, sliced
1 small onion, chopped
1 cup baby carrots, cut in half
2 stalks celery, sliced
3 to 4 cloves garlic, minced

1/4 cup crushed tomatoes6 c. low-sodium beef broth



  1. Pat beef dry with paper towels and season well with salt and pepper. In a large pot over medium heat, heat oil. Working in batches, add beef and sear on all sides until golden, about 5 to 6 minutes per side. Remove from pot and repeat with remaining beef, adding more oil as necessary. 
  2. In the same pot, add mushrooms and cook until golden and crispy, 5 minutes. Add onion, carrots, and celery and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Add tomatoes and stir to coat vegetables. 
  3. Add broth, and beef to pot and season with salt and pepper. Bring to a boil and reduce heat to a simmer. Simmer until beef is tender, 50 minutes to an hour.
