Keto Jerk Chicken

The Keto journey continues! My two sons have made this a lifestyle. Yes, there are times that it makes it really hard to stick to it but they accept it and move forward. The recipes that we have discovered along this trek have been amazing and work for almost any diet or family. This one will not disappoint! Let me introduce Keto Jerk Chicken!

INGREDIENTS
Bunch of green onions, plus more for garnish, thinly sliced
2 garlic cloves
1 jalapeno, roughly chopped (remember, if you want more heat, leave the seeds)
1 lime juice
2 T olive oil
1 T brown sugar
1 12/ tsp ground allspice
1 tsp thyme
1/2 tsp cinnamon
salt
8 chicken thighs or drumsticks
DIRECTIONS
 
  1. In a blender, combine green onions, garlic, jalapeño, lime juice, oil, brown sugar, allspice, thyme, cinnamon, 1 teaspoon salt, and 2 tablespoons water and blend until smooth. Set aside 1⁄4 cup. 
  2. Place chicken in a shallow dish and season with salt. Pour remaining marinade over chicken; toss to coat. Let marinate in fridge, turning once or twice, at least 2 hours or up to overnight. 
  3. When ready to cook, preheat the oven. Bake in a baking dish for 45 to 1 hour or until the juices are clear.
  4. Garnish with green onions and serve!
