Banana Bread Bars

Moist and dense, Banana Bread Bars with Quick Caramel Frosting have the texture of brownies and taste like banana bread!

This dessert is rich and sweeter than a slice of traditional banana bread. It would be so great for a family dessert to a fancy brunch. It is so easy to make and cooks faster traditional banana bread. I made these little gems the other night when my grandkids were sleeping over and the sheet pan was licked clean by the next day! You could add chocolate chips or your favorite nut to add another flavor too! The caramel frosting makes these irresistible.

Ingredients
  1. For the Cake
  2. 1 and 1/2 cup sugar
  3. 1 cup sour cream
  4. 1/2 cup butter, softened
  5. 2 eggs
  6. 2 to 3 ripe bananas mashed
  7. 2 teaspoon vanilla extract
  8. 2 cups flour
  9. 1 teaspoon baking soda
  10. 1 teaspoon salt
  11. Caramel Frosting
  12. 1 cup brown sugar packed
  13. 1/2 cup heavy whipping cream not whipped
  14. 1/2 cup butter, softened
  15. 1 teaspoon vanilla extract
  16. 2 and 1/2 cups powdered sugar
Instructions
  1. For the Cake
  2. Preheat oven to 350 degrees
  3. Grease sheet pan.
  4. In a large bowl, combine together sugar, sour cream, butter, and eggs until creamy.
  5. Add in bananas and vanilla extract.
  6. Add flour, baking soda, and salt. Combine for 1 minute or until well incorporated.
  7. Evenly spread the batter on the prepared pan.
  8. Bake 18 to 20 minutes.
  9. For the Caramel Frosting
  10. On medium heat, bring the sugar, butter, and whipping cream to a boil.
  11. Boil 1 minute exactly.
  12. Remove the pan from the heat and whisk in vanilla extract.
  13. Using a hand mixer, combine in powdered sugar and blend for 3 to 5 minutes to thicken.
  14. Immediately pour over cake. Quickly spread evenly.
