Grilled S’more Sandwich

When my grandkids come to my house they know that it’s time for treats with grandma! My Cooper is so funny because before he leaves my house, he believes that he needs to stock up on treats. I know that makes it sound like my pantry is full of goodies galore but the truth is it’s not! He will grab a pack of popcorn so he can pop it at home or whatever else he can find. It’s so stinkin cute! The other day I had the opportunity to watch them while their mom went to the doctor, I was prepared! I have been dying to make a S’more sandwich and this was my opportunity! Yes, they are my little guinea pigs.

Do you ever have that time in the evening when you are craving a treat and you don’t want to make a cake? This is a perfect substitute! So quick and easy and is sure to please any crowd! Your all-time favorite grilled cheese is so awesome especially when that ooey gooey cheese starts to ooze out of the sandwich. This is the same thing but ooey gooey chocolate and marshmallow comes out to greet you! Life can’t get any better! lol

2 slices white bread

butter, softened

3/4 cup graham cracker crumbs

mini marshmallows

chocolate chips

cinnamon and sugar, for garnish!

  1. Heat up a skillet or griddle to a low heat.
  2. Butter one side of both slices of bread and place them in the skillet.
  3. On one slice of bread, sprinkle a layer of mini marshmallows followed by a layer of crumbled graham crackers. On the other slice of bread, sprinkle a layer of chocolate chips. Let ingredients melt for a minute. Carefully sandwich the two slices together, so the chocolate and the marshmallows meet in the middle.
  4. Place the sandwich on the heated skillet and cook until the bread is toasted and golden brown, about 2 minutes. Flip the sandwich and grill for an additional 2 minutes. Sprinkle with cinnamon and sugar. Remove and enjoy!
