Keto Meatloaf! This is a perfect low-carb Keto Meatloaf recipe! You can’t help but get excited when the cheese starts to flow out of the middle and if you are on a budget, you will feel like your eating like royalty without breaking the bank!

 

The fitness journey continues! My husband is actually loving this diet. This past weekend he took a break because the guys in our family took a man trip to Zions.

 

They hiked the Narrows and didn’t want to worry about what they were eating on this long hike. Now it’s back and I don’t know anyone that can’t find something they love to eat from the Keto diet.

 

The only thing that is really hard for me, is cutting out bread! That’s my downfall! The good thing about any of these recipes is that the whole family can enjoy them even if they aren’t following the diet! 

 

 

Keto Meatloaf

 

I’m not usually a meatloaf lover but this one has totally changed my mind! It’s so juicy and full of flavor and your mouth will do a happy dance!

 

Keto Meatloaf

Ingredients

  • lb. Ground beef
  • 1 lb. sausage
  • 1 Egg
  • 1/2 cup Coconut flour or 1 cup Almond flour
  • 1 onion, minced
  • 2 to 3 Garlic cloves, minced
  • 1/2 tablespoon Garlic powder
  • 1/2 tablespoon Onion powder
  • 1/2 tablespoon smoked paprika
  • teaspoon salt
  • teaspoon pepper
  • 6 oz. Mild cheddar cheese block, cut into chunks
  • 1/2 cup Pico de Gallo

 

 

Directions

  1. Preheat oven to 350F

  2. Mix all ingredients together in a large bowl, except cheese and pico de gallo.

  3. Add half of the meatloaf mixture to a loaf pan and press into the bottom (if you don’t have a loaf pan big enough, then you can form the mixture into a loaf shape on a sheet pan)

  4. Place the cheese into the center of the loaf pan, leaving about an inch on all sides.

  5. Add the rest of the meatloaf to the pan and press it down to compress it slightly.

  6. Bake in the oven for 45 to 50 minutes.

  7. Remove from the oven and let sit for 10 minutes.  Serve with Pico de Gallo.

  1. WOW! I found this recipe through the Pretty Pintastic Party and I can not wait to try it. I’ve been living a keto lifestyle for maybe half a year now and I’m loving. I’ll admit, I’ve been craving meatloaf from a nearby local restaurant but I know it’s stuffed with breadcrumbs and I don’t want to overindulge. I can’t wait to feed my craving! This recipe makes me excited for dinner.
