Banana Peanut Butter Cookie

My family is always telling me to buy bananas so they can start to eat a little healthier. It never fails, I always end up with super ripe bananas and I don’t want to just throw them away. I usually do my old stand by of banana bread but this time I wanted to try something new! Banana Peanut Butter Cookies! 




I was a little giddy when I was making these cookies because I love peanut butter and I love bananas! These little gems are so moist and soft that they almost melt in your mouth!





Banana Peanut Butter Cookies

  1. 1/2 cup peanut butter
  2. 1/4 cup butter, softened
  3. 1 cup brown sugar
  4. 1 teaspoon vanilla
  5. 1 ripe banana, smashed
  6. 1 teaspoon baking soda
  7. 1 teaspoon salt
  8. 1 3/4 cup flour
  9. white sugar for rolling
  1. Preheat oven to 350 degrees.
  2. In a bowl, cream together peanut butter, butter, and sugar. Add the vanilla and banana and mix well.
  3. Add the dry ingredients and mix until just combined.
  4. Form dough into golf size balls and then roll them in the sugar. Place on baking sheet and press a criss cross with a fork on top of the cookie.
  5. Bake for 9 to 11 minutes.

  1. What an unusual flavor combination! I definitely must give these cookies a try, since the look so delicious!
    FYI… You can peel and freeze the over-ripe bananas for use in veggie smoothies. One ripe frozen banana can completely over power the taste of spinach, kale…or just about anything else.
