Cherry Pie Bars

Cherry Pie Bars

Every Summer, my husband’s family has a fabulous swimming party with all the extended family. It’s Lisa’s favorite party of the year! You can’t have a party without food!

So we always have the traditional potluck dinner and enjoy so many yummy dishes! This year I decided to try Cherry Pie Bars, and I must say, I’m glad that I did!

  2. 1 1/2 cups flour
  3. 1 teaspoon baking powder
  4. 1 teaspoon salt
  5. 1/2 cup butter, softened
  6. 3/4 cup sugar
  7. 2 eggs
  8. 1 teaspoon vanilla
Glaze
  1. 1/2 cup powdered sugar
  2. 2 to 4 teaspoons milk
  3. 1 teaspoon vanilla
Instructions
  1. Preheat oven to 350 degrees. Grease an 8 x 8 pan or line it with parchment paper.
  2. In a large bowl, mix together flour, baking powder, and salt. In a different bowl, cream together butter and sugar until smooth. Beat in each egg, one at a time, and then add the vanilla. Gradually combine with the dry ingredient mixture,
  3. Spread about 3/4 of the dough into the bottom of the pan. Spread pie filling over the top. Crumble the remaining dough over the cherries. Bake for 30 to 35 minutes and then let completely cool.
  4. While the pie squares are still warm, make the glaze. In a bowl, whisk together the powdered sugar, milk, and vanilla. If it's too thick add more milk. Drizzle over the bars. Let glaze harden before serving.
