Garlic and Honey Grilled Shrimp

 
Garlic and Honey Grilled Shrimp and Pineapple! They’re marinated with fresh garlic, soy, honey, and Balsamic vinegar. But the great thing is you don’t have to have a lot of time to let them soak, in fact, marinating them too long could be a problem. So this recipe is perfect, even if you’re short on time.
 
Garlic and Honey Grilled Shrimp
 
 
 

 I know it’s cold outside, but I really wanted something yummy and grilled, so I tortured the husband by banishing him to the cold patio to grill some shrimp and pineapple for our family. I don’t think it bothered him too much, because he’s pretty much the most patient person ever, and because he loves shrimp!

 

In fact, our whole family loves shrimp! Our kids are little seafood monsters, it’s getting pricey! They LOVE crab, shrimp, and now they’re starting to love sushi. I’m glad they’re not too picky, but sometimes I wish I could just throw a cheap bowl of fried rice in front of them without them begging for their own sushi, haha!

Anyway, back to these fresh and delicious shrimp!

 

Garlic and Honey Grilled Shrimp 

 

  • 18 large shrimp, peeled 
  • 2 fresh pineapples,  cut into 1-inch squares. I needed 2 pineapples for this.
  • 1/4 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 1/4 cup honey
  • 1/4 cup avocado oil
  • 1 teaspoon minced garlic
  • Juice of 1 lime
  • 6 wooden skewers, soaked in water for at least 30 minutes

 

 

DIRECTIONS

 

  1. In a zipper plastic bag, mix the soy sauce, balsamic vinegar, honey, garlic, and avocado oil.
  2. Add the pineapple and shrimp.
  3. Allow the bag to marinate in the fridge for a half-hour. Don’t over marinate! 
  4. Slide the shrimp and pineapple onto their own skewers. 
  5. Heat the grill to medium heat.
  6. Grill for 5-8 minutes or until shrimp starts to curl and turn pink. 
  7. Grill the pineapple until it’s warm and caramelized.
  8. Squeeze lime juice over hot shrimp.
  9. Serve with rice.
