Tolberone Mousse
Ingredients
First Stage
- 2 1/2 170 gram Tolberone bars
- 2 cups heavy whipping cream
- 210 grams white marshmallows
Second Stage
- 1 1/2 170 gram Tolberone bars
- 2 cups heavy whipping cream

Directions
- Roughly chop the 400 grams of Tolberone and place it in a large microwave-safe bowl with the 2 cups of cream and the marshmallows. Stir thoroughly.
- Microwave on high for 3 minutes, at 30 seconds at a time. Stir until the ingredients until they are completely melted. If it doesn’t take the entire 3 minutes that’s okay.
- Remove the mixture from the microwave, use a whisk to give it a good stir, and set aside on your bench for it to cool completely.
- Take the second stage ingredients, whip the additional cream to soft peak stage, and chop the additional Tolberone.
- Add the whipped cream to the cooled Tolberone mixture. Fold it in gently with a spatula and then use a whisk to combine. The mixture should be very smooth, you don’t want to have any random lumps of cream.
- Divide into bowls and then place into the fridge for about 45 minutes, or until the top layer sets slightly. Remove from the fridge and top each serving with a generous sprinkling of Toblerone. Place back into the fridge for at least 8 hours, preferably overnight to set.
