Teriyaki Chicken Peppers

Some dinners feel like a chore. This one? It’s a mini luau in a baking dish.

The moment the teriyaki sauce hits the warm skillet, the scent of soy, garlic, and ginger fills your kitchen with that “ooh-what’s-cooking?” magic. The bright pops of pineapple and colorful peppers make the whole dish look like it’s wearing a vacation shirt.

It’s sweet, savory, tangy, and just fancy enough to make you feel like you put in way more effort than you actually did (we love a good weeknight flex). Best part — it’s baked right into its own edible bowl. Less mess, more cute.

To be honest, I usually look at recipes for stuffed pepper, and as much as they look delicious, I’m not a fan. I kept seeing recipes that had the same flavor profile as our recipe and I kept convincing myself, it wouldn’t be a winner. I talked to my husband about it and he kept telling he wasn’t a fan, either. I finally decided to give it a try and see what I could come up with…….I’m glad I did!

Why You’ll Love This Recipe

If your dinner routine has been feeling a little… meh lately, these Hawaiian-inspired Teriyaki Chicken Stuffed Peppers are your perfect reset. They’re colorful, nutrient-packed, family-friendly, and fully customizable. You can use leftover rotisserie chicken, switch up the rice, or even make them vegetarian.

The combo of juicy chicken, fluffy rice, sweet pineapple, and homemade teriyaki sauce is basically the food version of a beach sunset. And instead of juggling multiple pans and side dishes, you just pop it all into a pepper, bake, and done.

Plus — these make you look like the kind of person who has their life together enough to plan beautiful, color-coordinated meals. Even if dinner was, in fact, a last-minute inspiration while standing in the produce aisle.

IT IS SO GOOD! Yes, my fussy husband loved it too! It is so easy to put together and the flavor will make your mouth happy! How can you go wrong with a recipe like that?

What is the difference between bell peppers?

The main difference between the colors of bell peppers is the level of maturity. Green bell peppers are the least mature and tend to be more bitter. Red bell peppers are the most mature, meaning they have been left to grow on the vine longest.

Which bell pepper is the sweetest?

Red bell peppers take the lead on levels of sweetness. However, I personally find yellow and orange to be just was sweet and add a beautiful spectrum of color that is visually appealing.
