This Strawberry Shortcake Poke Cake is the dessert equivalent of sunshine in a pan. It’s light, fruity, creamy, and ridiculously easy to make — the kind of recipe that makes you look like a baking genius without breaking a sweat.

We’re talking:

  • A soft, fluffy cake base (white or yellow — your choice!)
  • Sweet, saucy strawberry pie filling that seeps into every bite
  • A cloud of whipped topping that’s light as air
  • Fresh sliced strawberries for that just-picked freshness

It’s perfect for BBQs, birthdays, potlucks, or “just because” days. And the best part? You can make it ahead, keep it chilled, and pull it out when you’re ready to wow the crowd.

I love, love recipes in the Summer that include strawberries! I don’t know what it is but it seems to scream Summer, fun, family and memories. We were celebrating my son, Ben’s, birthday, yesterday. I let them request certain dishes for their birthday dinner.

Ben actually asked for cheese enchiladas covered with steak (from me and his brother, Zac), Banana cinnamon rolls (from Cassie, and a Corn salad (from his sister, Jessica). It turned out so amazing!

You are probably wondering how this cake was part of this story, well, I have been trying to make it for weeks! With all the Summer celebrations, I just didn’t get around to it! So I decided I was going to make it just in case we didn’t have enough dessert! You never have enough dessert, right?

I was glad I did! It is so easy to make and boy is it so GOOD! I would recommend this recipe for any celebration you have planned or just an ordinary day that you need something yummy!

👩‍🍳 Cooking Tips for the Best Poke Cake

  • Poke deep — You want those holes to go almost to the bottom so the filling really soaks in.
  • Cool before topping — Warm cake + whipped topping = melty mess.
  • Chill time is magic — The longer it sits, the more the flavors meld.
  • Slice strawberries last minute — Keeps them fresh and vibrant.
  • Want extra strawberry punch? — Add a layer of sliced berries under the whipped topping too.

🎨 Recipe Variations

  • Berry Mix-Up — Use blueberry or raspberry pie filling instead.
  • Chocolate-Covered Strawberry — Make the cake chocolate and keep the strawberry topping.
  • Lemon Twist — Add lemon zest to the cake batter for a bright flavor.
  • Homemade Whipped Cream — Swap Cool Whip for fresh whipped cream (stabilize if making ahead).
  • Gluten-Free — Use a gluten-free cake mix.

🧒 Kid Tips

  • Let kids poke the holes — it’s the most fun part!
  • Have them arrange the strawberries in patterns or shapes.
  • Make mini versions in cupcake tins for easy kid-sized servings.
  • Keep a few plain pieces for picky eaters who like less topping.

🛒 Grocery Hacks

  • Buy cake mix on sale — Stock up for quick desserts.
  • Frozen strawberries — Thaw and drain well if fresh aren’t in season.
  • Store-brand pie filling — Often just as good as name brand.
  • Whipped topping — Keep a tub in the freezer for dessert emergencies.
  • Bulk berries — Slice and freeze extras for smoothies or future cakes.

💭 Final Thoughts

This Strawberry Shortcake Poke Cake is proof that you don’t need fancy techniques or hours in the kitchen to make something that feels special. It’s light, fruity, and perfect for any occasion — or no occasion at all.

Some desserts are just desserts. And then there are desserts like this — the kind that make people smile before they even take a bite. The kind that disappear from the table faster than you can say “seconds.”

This cake is a celebration of everything we love about summer: juicy strawberries, fluffy cake, and creamy topping. It’s the kind of recipe that works for a backyard BBQ, a birthday party, or a Tuesday night when you just need a little sweetness in your life.

What makes it even better is how adaptable it is. You can change the fruit, the cake flavor, the topping — and it still works. It’s forgiving, it’s fun, and it’s always a hit.

So here’s my challenge: make it, make it yours, and share it. Post your version with #PokeCakeParty so we can all swap ideas, cheer each other on, and maybe even inspire the next great poke cake trend.

  1. I love this–this looks amazing! I’ve seen strawberry poke cake before, but never with the fresh strawberries on top. This is definitely the way to do it. 🙂 Visiting from Senior Salon Pit Stop.
