Strawberry Jello Cake
The Most Irresistible Strawberry Cheesecake Cake That’ll Make You the Hero of Every Gathering
Strawberry Jello Cake
Hey there, sweet treat lovers! Can we talk about desserts that make people literally stop mid-conversation and ask for the recipe? Because that’s exactly what happened the first time I brought this strawberry Jello cake to a family barbecue.

Why This Recipe Will Become Your New Obsession
Let me paint you a picture of why this dessert is about to become your go-to dessert for literally everything. First off, it’s a total crowd-pleaser. I’ve served this at birthday parties, potluck dinners, and holiday gatherings.
The beauty of this recipe is that it hits all the right notes. You’ve got that tender, buttery vanilla cake that melts in your mouth, paired with the most incredible cheesecake filling that’s light and airy but still has that rich, tangy flavor we all crave. And then there are the strawberries – oh my goodness, the strawberries! They get suspended in this gorgeous strawberry Danish dessert that adds just the right amount of sweetness and creates these stunning layers that look absolutely show-stopping.
Plus, and this is huge for busy people like me, you can make this entirely ahead of time. Like, we’re talking make-it-the-day-before kind of ahead of time. It actually gets better as it sits because all those flavors have time to meld together and create pure magic.

Cooking Tips That’ll Save Your Sanity
Let me share some real-talk tips that I’ve learned through trial and error (mostly error, if we’re being honest):
Temperature matters: Room temperature ingredients mix better. Period. Take your cream chees an hour before you start baking. Your future self will thank you when everything comes together smoothly instead of looking like cottage cheese.
Don’t overmix: This is especially important for the cake batter. Mix just until everything is combined. Overmixing develops the gluten too much and gives you tough, chewy cake instead of that tender, fluffy texture we’re after.
Taste as you go: I always taste my cheesecake filling before adding as I go. Want it a little sweeter? Go for it.
Chill time is real time: I know it’s tempting to dig in right away, but this cake really needs at least 4 hours to set properly. Overnight is even better. The flavors develop, everything sets to the perfect consistency, and you’ll get clean, beautiful layers when you serve it.
Nutritional Information & Calorie Count
Let’s be real about what we’re working with here – this is a celebration dessert, not a diet food, and that’s perfectly okay! One serving (assuming you cut this into 12 servings) comes in at approximately 285 calories.
Here’s the breakdown per serving:
- Calories: 285
- Fat: 15g
- Saturated Fat: 9g
- Carbohydrates: 35g
- Sugar: 28g
- Protein: 5g
- Fiber: 1g
- Sodium: 180mg
The majority of calories come from the cream cheese and Cool whip in the cheesecake layer, which also provides most of the fat content. The strawberries add natural sweetness and a boost of vitamin C, while the cake provides the carbohydrates that make this dessert so satisfying.

Recipe Variations That’ll Keep Things Exciting
One of the things I love most about this recipe is how adaptable it is. Once you’ve mastered the basic version, you can totally make it your own:
Berry Medley Version: Swap out the strawberry Danish dessert for mixed berry jello and use a combination of strawberries, blueberries, and raspberries. It’s like a berry explosion in every bite.
Chocolate Strawberry Dream: Add 2 tablespoons of cocoa powder to your cake batter for a chocolate base layer. Trust me, chocolate and strawberries are a match made in heaven.
Lemon Strawberry Twist: Zip up the cheesecake filling with lemon extract, and add a tablespoon of fresh lemon zest to the cheesecake layer. It adds this bright, citrusy note that’s absolutely divine.
Sugar-Free Option: Use sugar-free jello and substitute the powdered sugar with a powdered erythritol sweetener. The texture will be slightly different, but it’s still delicious and much lower in carbs.
Seasonal Fruit Swaps: This formula works beautifully with other fruits too. Try it with cherry jello and fresh cherries in the summer, or orange jello with mandarin segments for a winter variation.
Storage Tips & How Long It Keeps
This cake will keep beautifully in the refrigerator for up to 3 days, covered with plastic wrap. The strawberries stay fresh and vibrant, the cheesecake layer maintains its perfect texture, and the cake layer stays moist and flavorful.
If you’re planning to keep it longer than a day, I recommend adding a piece of parchment paper directly on the surface before covering with plastic wrap. This prevents any condensation from dripping back onto your beautiful creation.
