This is hands down the best thing I have ever made in our married lives. I’m pretty
sure my husband loved it more than anything else I have made.

He is so sweet he will never say anything. But honestly try this out, it is delicious and super easy to make!!

Slow Cooker Beef and Broccoli Recipe

Ingredients:

§  1 lb. boneless, beef  chuck roast, sliced into thin strips
§  1 cup beef broth
§  ½ cup low sodium soy sauce
§  ⅓ cup dark brown sugar
§  1 tbsp. sesame oil
§  4 garlic cloves, diced
§  2 1/2 tbsp. cornstarch
§  ½ cup sauce (from the crockpot after the dish is cooked)
§  2 ½ cups Frozen broccoli cuts
§  White rice, cooked

Instructions:

Whisk Up the Sauce

In your crockpot, whisk together beef broth, soy sauce, brown sugar, sesame oil, and garlic. Make sure the sugar dissolves fully—no gritty surprises, please!

  • Coat the Beef
Add the sliced beef, gently tossing to coat every piece in that luscious liquid.
  • Low & Slow
Cover and cook on LOW for 6 hours. This is “go do literally anything else” time.
  • Thicken the Drama
After 6 hours, scoop out ½ cup of the cooking liquid. Whisk it with cornstarch in a small bowl to form a slip-and-slide–smooth slurry. Pour it back into the crockpot, stir, and cook on LOW for 30 more minutes.
  • Broccoli Finale
Stir in the frozen broccoli, cover, and let it go for another 3–5 minutes until the broccoli is bright green and tender-crisp.
  • Serve & Slay
Scoop portions of fluffy white rice into bowls, crown each with beef and broccoli, and drizzle any leftover sauce on top.

Cooking Tips

  • Plan Ahead: Prep your beef strips and whisk the sauce the night before. In the morning, just dump and walk away.
  • Even Slices: Thinner beef strips absorb sauce faster and cook more evenly. Aim for ¼-inch thickness.
  • Broth Swap: No beef broth? Swap in chicken or veggie broth—just bump up the salt if needed.
  • Toasted Sesame Seeds: Sprinkle a pinch on top for an extra crunch and that “I’m so chef-y” look.
  • Garlic Hack: If you’re fresh-clove-averse, 1 tsp garlic powder works in a pinch—just hold the gritty bits.

Recipe Variations

  1. Spicy Sriracha Kick
Add 1 tbsp Sriracha or chili garlic sauce with the marinade for tongue-tingling heat.
  2. Citrus Zing
Squeeze in the juice of ½ lemon or lime before serving to brighten and balance the sweetness.
  3. Keto-Friendly Swap
Skip the brown sugar entirely and use 2 tbsp erythritol or monk fruit sweetener. Serve over cauliflower rice.
  4. Veggie Mash-Up
Swap broccoli for a medley of snap peas, sliced bell peppers, or baby corn—colorful and daring.
  5. Mushroom Lover’s Dream
Toss in 1 cup sliced cremini mushrooms in the final 30-minute thicken step for extra umami depth.

Final Thought

Girls (and guys, because we love you too), remember: dinner doesn’t have to mean jogging through a grocery store at 5 p.m. with a toddler on one hip and existential dread on the other. The slow cooker is a magic genie that only asks for a moment of your time up front, then rewards you with dinner glory while you binge Netflix or—who knows—maybe even get nine hours of sleep? A girl can dream.

This sesame garlic beef & broccoli has become my midweek holy grail: it’s comfort-food dreamy, prep is faster than scrolling TikTok, and cleanup is minimal. Plus, leftovers are next-day champions in reheats or lunch bowls. Don’t be shy—double the batch for meal-prep heroes, freezer stashes, or impromptu dinner parties when your besties crash at your place.

There you have it: an easy-breezy, crowd-pleasing, crockpot wonder that takes your weeknight game to superstar status. From sweet-meets-savory sauce to crisp broccoli pops of green, this dish is everything you never knew you needed. So dust off your slow cooker, gather your ingredients, and give yourself a standing ovation—because tonight, dinner is on YOU.
