On Christmas morning everyone has their favorite breakfast dishes and it varies from family to family. Today, I’m going to share some of my families favorites for that special day!
The first one, is my husband’s favorite and it’s his dad’s family tradition. Mike thinks it comes from his Danish heritage but isn’t positive. All he knows is that his Grandma Florence would make it each year and he loves it!
It’s kind of different, but a really healthy alternative breakfast. I would describe it as a meat gravy, my son-in-law calls it meat Jell-O. The ones that love this dish have to make it each year because they crave, and love it so much!
🍲 PLUCKMY RECIPE
Ingredients

3 pounds pork shoulder

3½ pounds turkey or chicken

2 to 2½ pounds pork liver

2 envelopes Knox gelatin
-
Salt and pepper, to taste

In a large pot, cook pork shoulder and turkey (or chicken) together until fully cooked.

Remove meat, let cool, then de-bone and grind.

In a separate pot, cook pork liver, changing and discarding the water several times to mellow the flavor.

Cool liver, grind, and add to meat mixture.

Add reserved cooking liquid from pork/turkey pot (as much as desired for consistency).

Season generously with salt and pepper.

Stir in 2 envelopes of Knox gelatin.

Pour into containers and refrigerate until fully set.

Cut into portions, wrap, and freeze.
To serve:
Warm gently with a small amount of water. Serve over bread, top with a sunny-side-up egg, and garnish with chili sauce or ketchup.
