🍗🥕 One‑Skillet Veggie Chicken
Creamy, lemony, veggie‑loaded, cheesy, one‑pan dinner magic.
Creamy sauce, tender chicken, melty cheese, and veggies all in ONE skillet — basically dinner’s way of saying, ‘You’re welcome.
Let’s talk about the kind of dinner that doesn’t just feed your family — it rescues them. The kind that swoops in on a busy night and says, “Don’t worry babe, I got you.” The kind that makes your kitchen smell like a cozy farmhouse and a fancy bistro had a delicious little baby. The kind that makes your family wander in asking, “WHAT is that smell?” even though you literally just melted butter and sprinkled smoked paprika like the domestic goddess you are.
This One‑Skillet Veggie Chicken is exactly that kind of recipe.
It’s creamy, lemon‑bright, veggie‑packed, cheesy, savory, and unapologetically irresistible. It’s the kind of dish that makes people close their eyes on the first bite and whisper, “Oh… oh wow.”
This recipe is a celebration of simple ingredients doing the absolute most:
- Chicken thighs for juicy, tender perfection
- Smoked paprika + garlic for depth and warmth
- Carrots + mushrooms + spinach for veggie goodness
- Chicken stock + cream for a silky sauce
- Mozzarella for melty, stretchy glory
- Lemon juice for brightness
- Cornstarch for that glossy, restaurant‑style finish
It’s the kind of recipe that works for weeknights, date nights, meal prep, potlucks, or those “I need something delicious and comforting RIGHT NOW” moments.
Why this skillet dinner deserves a permanent spot in your rotation:
- It’s EASY — dangerously easy
- It’s FAST — ready in under 30 minutes
- It’s ONE PAN — bless
- It’s CROWD‑PLEASING — picky eaters don’t stand a chance
- It’s INSTAGRAM‑READY — creamy sauce + colorful veggies = perfection

Every Sunday we are so blessed to have our older kids for dinner. Of course, it’s a perfect day to try new things for the blog!
Having so many great cooks and different tastes at my dinner table, I get a lot of opinions about the dishes I make.
Seriously, this one got two thumbs up from everyone! The chicken is so tender and juicy and the dish is full of veggies. The great thing is that you make the whole dish in one skillet!
One Skillet Veggie Chicken
Ingredients:
8 chicken thighs
Smoked paprika, to taste
salt and pepper, to taste
3 Tablespoons salted butter, divided
3 garlic cloves
1 cup chicken stock
1/2 cup heavy cream
2 Tablespoons corn starch
1 cup Mozzarella cheese
juice one lemon
1 cup diced carrots
1 small carton sliced mushrooms
2 cups baby spinach
One Skillet Veggie Chicken
Directions:
- Preheat oven to 400 degrees
- Season chicken thighs with paprika, salt, and pepper.
- Melt 2 Tablespoons butter in a large Dutch oven skillet on medium heat. Add chicken, and sear both sides until golden brown, it was about 5 minutes for us; place chicken on a plate.
- Melt the remaining tablespoon of butter in the skillet. Add garlic, and cook, stirring frequently, until it smells yummy, about 2 minutes. Stir in heavy cream, cheese, and lemon juice. in a bowl, mix the corn starch with the chicken stock until smooth, and then pour into the skillet.
- Bring to a boil, reduce heat, stir in the mushrooms, carrots, and the spinach. Let simmer until the spinach has wilted and the sauce has thickened a little, about 5 minutes. Now put the chicken back into the skillet.
- Place the skillet into the oven and roast until completely cooked through, about 25 to 30 minutes.
