Grey once again wanted lime cake for his birthday. It’s so funny to me, but he wants it almost every time it’s his birthday. He doesn’t ask for it any other time. He’s so funny! This year he’s going to eight and he’s very excited for all the things that come with that. This year, he’s getting an experience instead of a fancy cake, party, and lots of presents.
We’re very excited, this cake is perfect for what he wanted. He always wants lime cake, but his dad says I don’t use enough lime flavoring. This is the perfect way to add that extra lime kick.

Lime Curd
Ingredients
Here’s what you’ll need to whip up this sunshine-in-a-jar:
- 3/4 cup sugar
- ¼ cup cornstarch
- 1 cup water
- 2 egg yolks slightly beaten
- 2 Tablespoons unsalted butter
- lime zest from one lime
- 4 Tablespoons lime juice
