Keto Meatloaf
🥩🧀 Keto Meatloaf — Cheesy, Savory, and Totally Glow‑Up Worthy
Ground beef, sausage, gooey cheddar, and a pop of pico — this Keto Meatloaf proves comfort food can be bold, flavorful, and low‑carb fabulous.

Meatloaf is the unsung hero of the dinner table. It’s hearty, it’s filling, and it’s the kind of dish that makes you feel like you’ve got life figured out (even if you don’t). But let’s be honest: not all meatloaves are created equal. Some are bland, some are boring, and some are just… beige. Enter Keto Meatloaf — the glow‑up version of comfort food.
This recipe is indulgent in its own way: it’s savory, it’s cheesy, and it’s the kind of dish that makes you want to grab seconds (because one slice is never enough). Ground beef brings hearty satisfaction, sausage adds smoky depth, egg binds it all together, almond or coconut flour keeps it keto‑friendly, onion and garlic swoop in like the flavor crown jewels, paprika adds smoky flair, cheddar melts into gooey bliss, and pico de gallo? That’s the mic‑drop moment.
Why this recipe is a keeper:
- Effortless elegance — pantry staples, restaurant‑worthy results.
- Flavor fireworks — smoky sausage + gooey cheddar + fresh pico.
- Family‑friendly — picky eaters don’t stand a chance.
- Make‑ahead friendly — reheats beautifully.
- Instagram‑worthy — golden slices deserve a close‑up.

- 1 lb. sausage
- 1 Egg
- 1/2 cup Coconut flour or 1 cup Almond flour
- 1 onion, minced
- 2 to 3 Garlic cloves, minced
- 1/2 tablespoon Garlic powder
- 1/2 tablespoon Onion powder
- 1/2 tablespoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 6 oz. Mild cheddar cheese block, cut into chunks

Directions
-
Preheat oven to 350F
-
Mix all ingredients together in a large bowl, except cheese and pico de gallo.
-
Add half of the meatloaf mixture to a loaf pan and press into the bottom (if you don’t have a loaf pan big enough, then you can form the mixture into a loaf shape on a sheet pan)
-
Place the cheese into the center of the loaf pan, leaving about an inch on all sides.
-
Add the rest of the meatloaf to the pan and press it down to compress it slightly.
-
Bake in the oven for 45 to 50 minutes.
-
Remove from the oven and let sit for 10 minutes. Serve with Pico de Gallo.

💭 Final Thoughts
This Keto Meatloaf is proof that comfort food doesn’t have to be complicated. It’s hearty, flavorful, and versatile enough to be a weekday staple, a family favorite, or a “just because” indulgence. Plus, it’s the kind of recipe that makes everyone smile — and isn’t that the best kind of cooking?
Here’s the thing about meatloaf — it’s never just meatloaf. It’s the smell of garlic sizzling, the joy of cheddar melting, the comfort of knowing you’ve got a dish that’s both playful and nostalgic. It’s the kind of recipe that makes you feel like you’ve pulled off a weeknight miracle without breaking a sweat.
And this Keto Meatloaf? It’s a keeper. It’s bold, it’s savory, it’s indulgent, it’s fun. It’s the kind of recipe that makes you feel like you’ve turned pantry staples into something restaurant‑worthy. It’s hearty enough to feed a crowd, flexible enough to adapt to whatever veggies you’ve got hanging out in the fridge, and comforting enough to become the dish your family requests again and again.
But what I love most is how recipes like this bring us together. Food has that magic — it’s not just about eating, it’s about sharing. It’s about swapping tips, laughing over spice‑splattered counters, and building little traditions that make life tastier. It’s about the kids sneaking extra bites when you’re not looking, the friends who ask for seconds, and the quiet satisfaction of knowing you’ve created something that feels like home.
So here’s my challenge to you: make this dish, share it with your people, and then tell me your twist. Did you add jalapeños? Did you sneak in mushrooms? Did you double the cheese just because you could? (No judgment — I’d be first in line for that version.) Maybe you turned it into mini meatloaf muffins for portion control, or gave it a veggie‑forward glow with roasted peppers. Whatever your spin, I want to hear about it.

I really need to try it, we just started our keto lifestyle ????
WOW! I found this recipe through the Pretty Pintastic Party and I can not wait to try it. I’ve been living a keto lifestyle for maybe half a year now and I’m loving. I’ll admit, I’ve been craving meatloaf from a nearby local restaurant but I know it’s stuffed with breadcrumbs and I don’t want to overindulge. I can’t wait to feed my craving! This recipe makes me excited for dinner.
This meatloaf looks so pretty and delicious! Thanks so much for sharing with us at Full Plate Thursday, we sure enjoyed your post!
