When I told my husband what I was making, he was a little nervous that it wouldn’t be as great as I thought it would be………but he was pleasantly surprised! Hot Wing Chicken Casserole Recipe

Ingredients

  • 1 rotisserie chicken, shredded

  • 4 medium potatoes, cubed

  • 1/2 cup olive oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 Tablespoon paprika

  • 1 Tablespoon garlic powder

  • 1 cup onion, diced

  • 4 Tablespoons hot sauce (add more if you love heat)

  • 1 cup ranch dressing

  • 2 Tablespoons dry ranch dressing

  • 1 1/2 cups shredded cheddar cheese

  • 1 pound bacon, cooked and crumbled


Directions

  1. Preheat oven to 450°F.

  2. In a medium bowl, combine olive oil, salt, pepper, paprika, garlic powder, onions, and hot sauce.

  3. Add shredded chicken to the mixture and stir to coat. Set aside to marinate.

  4. Place cubed potatoes into a gallon-sized Ziploc bag with 1 Tablespoon olive oil and 2 Tablespoons dry ranch dressing. Shake until evenly coated.

  5. Spread potatoes into a 9×13 baking dish. Roast for 20–30 minutes until golden and fork-tender.

  6. Reduce oven temperature to 350°F.

  7. Remove potatoes from oven and top with marinated chicken, shredded cheddar, crumbled bacon, and drizzle with ranch dressing.

  8. Bake another 20–30 minutes until cheese is melted and chicken is heated through.

Optional: Substitute blue cheese dressing for ranch if that’s your wing style.

    1. Not a stupid question. I think it depends on you. If you don't like the peels on the potato, I would peel it first, then cut it. I like the peels left on sometimes, so just make sure you wash the potato.
