INGREDIENTS:

4 C flour

1 tsp Salt

2 tsp baking powder

2 TBS lard

1 1/2 C water

 

DIRECTIONS:

  1. Add flour, salt, and baking powder and whisk together in a mixing bowl.
  2. Mix in the lard with your fingers until the mixture resembles cornmeal.
  3. Add the water and mix until the dough comes together.
  4. Place on a lightly floured surface and knead a few minutes until smooth and elastic.
  5. Divide the dough into 12 equal pieces and roll each piece into a ball.
  6. Preheat a large skillet over medium heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla.
  7. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side.

  2. I totally make our tortillas! I make them for all sorts of things and it really makes me happy. Instead of using lard, we use either butter or olive oil. What’s really cool is when Monkey Boy wants to help too and I give him a glass jar as a rolling pin! 🙂
