Anyways, Hawaiian Haystack Casserole was the perfect dinner for us last night! We even have some leftovers for dinner today!

Ingredients
- 3 cups diced rotisserie chicken
- 10.5 oz cream of chicken soup can use low-sodium
- 3 cups cooked rice
- 1/2 cup sliced almonds or slivered almonds
- 1/2 cup light sour cream
- 3/4 cup diced celery
- Pineapple tidbits
- black olives, sliced
- Chow Mein noodles
- salt and pepper to taste
Directions
- Preheat
- Set oven to 350°F. Grease a 9×13 baking dish.
- Mix the Base
- In the baking dish, combine chicken, cream of chicken soup, cooked rice, almonds, sour cream, and celery. Season with salt and pepper.
- Bake
- Spread mixture evenly. Bake uncovered for 30–40 minutes, until heated through.
- Top & Serve
- Remove from oven. Add pineapple tidbits, sliced olives, and chow mein noodles on top.
- Serve immediately, letting everyone add extra toppings if they like.
