DIRections

  1. Place the pork butt into the freezer for 15-20 minutes to firm up.
  2. Use a sharp knife to cut the butt into strips, no more than 1/4 inch thick.
  3. Place the pork into a sealable bag, then add the soda, fish sauce, sugar, soy, vinegar, garlic and salt. Seal, then place in the refrigerator overnight.
  4. Heat a grill for medium cooking, about 350f.
  5. Place the skewers onto the heated grill. I turn them 3-4 times during the cook to allow them to color without burning, and cook evenly to a safe temperature. Turn the skewers after 5 minutes, then cook a further 5 minutes and turn again. Cook another 5-7 minutes. You may need to turn the skewers more frequently during the final minutes to stop them from burning.
  6. Remove from grill and serve.

Ingredient Breakdown & Flavor Profile

Each ingredient plays a key role in developing a rich, mouthwatering sauce. Here’s why they work together so well:
  • Boneless Pork Butt: This cut has the perfect balance of fat and lean meat, making it ideal for slow cooking. As it braises, the fat melts and keeps the meat juicy.
  • Orange Fanta: Adds a citrusy sweetness, caramelizes beautifully, and creates a sticky, rich glaze. Want a natural alternative? Use fresh orange juice with a touch of honey instead.
  • Fish Sauce: Brings a deep umami punch—a secret ingredient that enhances the overall depth of flavor.
  • Brown Sugar: Balances the acidity and rounds out the sweetness. If you prefer a lighter touch, swap it for honey or maple syrup.
  • Soy Sauce: Adds saltiness and umami, essential for a rich, flavorful sauce. Go for low-sodium if preferred.
  • Rice Wine Vinegar: Brightens the dish, cuts through the richness, and enhances the marinade’s complexity.
  • Kosher Salt: Helps bring out the natural flavors of the pork and supports even seasoning.
  • Garlic: Essential for depth and aroma—you can never have too much!

Cooking Tips for Maximum Flavor

1. Marinate for Deeper Flavor If time allows, marinate the pork overnight in the sauce mixture. This helps the flavors absorb and ensures each bite is packed with depth. 2. Slow & Low Cooking Method The best way to cook pork butt is low and slow, allowing the fat to break down and create an ultra-tender texture. 1️⃣ Oven Method:
  • Preheat to 300°F.
  • Place pork in a covered Dutch oven or roasting pan.
  • Cook for 3–4 hours, basting occasionally.
2️⃣ Slow Cooker Method:
  • Set to low and let it cook for 6–8 hours until it falls apart effortlessly.
3. Finishing Touch: Caramelization For an extra layer of richness, after slow cooking, brush with extra glaze and broil for 5–7 minutes. This creates a sticky, caramelized crust that makes every bite irresistible.

How to Serve It

Once the pork is fall-apart tender, shred it with two forks or slice into chunks. Here are some delicious ways to enjoy it: 🌮 Tacos: Fill warm tortillas with the pork and top with pickled onions, avocado, and fresh cilantro. 🍚 Rice Bowl: Serve over jasmine rice, drizzle with extra sauce, and add a side of sautéed veggies. 🥪 Sandwiches: Pile onto toasted brioche buns with crunchy slaw and a drizzle of spicy mayo. 🥗 Salad: For a lighter option, toss shredded pork with greens, cabbage, and a tangy vinaigrette.

Healthier Adjustments

Want a health-conscious spin? Here are some easy modifications: ✔ Swap Orange Fanta for fresh orange juice & honey to reduce processed sugar. ✔ Use low-sodium soy sauce and reduce fish sauce for lower sodium. ✔ Opt for leaner cuts like pork loin for less fat. ✔ Cut the brown sugar in half for a slightly less sweet glaze.
