Picture this: it’s a hectic weeknight, you’re juggling work emails, Zoom calls, and the eternal question of “What’s for dinner?” Your heart yearns for comfort food. Your stomach whispers “pot pie,” but your soul cries “boredom!” Fear not, because I’ve got your culinary back with this Easy Garlic Bread Chicken Pot Pie. It’s the cozy, creamy classic you love—packed with tender chicken, garden-fresh veggies, and a dreamy garlic-cream sauce—crowned by a golden garlic bread crust that soaks up every last drop of savory goodness.

In just 30 minutes (no typo, I promise), you’ll transform humble pantry staples into a soul-soothing dinner that feels gourmet but takes practically no effort. No more wrestling with fiddly puff pastry or soggy tops that flop the second you slice in. This recipe is all about speed, flavor, and maximal comfort—because life’s short, and dinner should be a delight, not a drudge.

I don’t know about you, but on rainy, gloomy days, I crave something warm and comforting. This homemade chicken pot pie does just the trick and makes me happy! The filling is  so creamy and delicious.

One great thing about a pot pie is that you can easily change the recipe depending on what you have in your fridge or pantry! No chicken? You can add beef or roasted turkey.

Out of celery? Use corn or chopped green beans or any veggie you have in the fridge. There are so many options on how to make this. I’m sure most of the ingredients you have in your pantry!

Garlic Bread Chicken Pot Pie

Ingredients

  • 1 tbsp. olive oil
  • small package mushrooms sliced
  • 4 tbsp. butter
  • 1 onion, finely chopped
  • 2  to 3 garlic cloves, minced

  • 2 celery stalks, chopped
  • 4 tbsp. flour

  • 1 1/2 cups of chicken broth
  • 4 cups cooked chopped turkey or chicken, diced
  • 1 1/2 cups frozen peas
  • salt and pepper, to taste

GARLIC BREAD TOPPING

  •  4 tbsp. salted butter
  • 2 garlic cloves, minced using a garlic press or grab a tube of minced garlic, it’s in the produce section

Directions

  1. Preheat & Prep
Preheat your oven to 400°F. Butter or spray a 9-inch pie dish or 8×8-inch baking pan.
  2. Sauté Veggies
In a large skillet over medium heat, melt 2 tablespoons of butter. Add carrots, peas, and celery; cook until veggies are just tender, about 5 minutes.
  3. Make the Roux
Push the vegetables to one side. Add the remaining 1 tablespoon of butter to an empty spot in the pan, then whisk in the flour. Cook for 1–2 minutes, stirring constantly, until it’s slightly golden and smells nutty.
  4. Creamy Goodness
Slowly pour in the chicken broth while whisking to avoid lumps. Add the milk, garlic powder, salt, and pepper. Simmer until the sauce thickens, 2–3 minutes.
  5. Add Chicken
Stir in the cooked chicken. Taste and adjust seasoning—this is your moment to shine.
  6. Assemble
Pour the creamy chicken mixture into your prepared dish. Arrange garlic bread halves on top, cut-side down, covering the filling.
  7. Bake & Broil
Bake for 15 minutes, then switch to broil for 2–3 minutes until the garlic bread is crisp and golden. Keep a close eye to avoid burning.
  8. Rest & Serve
Let it rest 5 minutes so the filling sets. Slice, serve, and watch your dinner guests’ eyes light up.

Cooking Tips

  • Rotisserie Chicken Shortcut: Skip poaching or roasting chicken—grab a rotisserie bird from the store. Shred or chop it, and you’re golden.
  • Veggie Variety: Swap or add broccoli florets, sliced mushrooms, or bell peppers. This cozy pot pie welcomes garden-fresh (or frozen) helpers.
  • Slump-Free Roux: Low and slow is the name of the game. Whisk continuously when adding liquid to your flour–butter mixture to avoid lumps.
  • Bread Crispness: Pop the bread under the broiler for just 2 minutes. Too long and you’ll have charcoal instead of crust.
  • Make-Ahead Magic: Assemble the filling the night before. Store covered in the fridge, top with bread, then bake when you get home—fresh, fast, and fabulous.

Recipe Variations

  1. Spicy Buffalo Twist
    • Stir ¼ cup buffalo wing sauce into the filling.
    • Top with blue cheese crumbles alongside your garlic bread.
    • Serve with extra ranch or blue cheese dressing on the side.
  2. Herby Harvest
    • Add 1 teaspoon dried thyme and 1 tablespoon chopped fresh parsley to the sauce.
    • Swap garlic bread for herb-buttered focaccia cut to fit your dish.
  3. Cheesy Overload
    • Stir 1 cup shredded Monterey Jack or Gruyère into the filling.
    • Top with garlic bread and a sprinkle of Parmesan for a triple-cheese dream.
  4. Seafood Sensation
    • Replace chicken with 2 cups cooked shrimp or flaky white fish.
    • Reduce cooking time to avoid overcooking seafood. Garnish with fresh dill.
  5. Vegetarian Version
  • Skip the chicken. Add extra mushrooms and potatoes for heft.
  • Use veggie broth instead of chicken broth. Don’t compromise on butter—it’s crucial for flavor.
