Egg Omelette Cupcakes
The Make-Ahead, Mix-and-Match Breakfast That Wakes Up Winning
These aren’t cupcakes pretending to be eggs—these are eggs that finally got organized.

Let’s talk breakfast reality. Mornings are busy. Appetites are unpredictable. Some people want cheese, some want veggies, some want meat, and someone always changes their mind halfway through cooking. Enter: Egg Omelette Cupcakes, the unsung heroes of easy breakfasts, quick lunches, and snack-worthy protein bites.
These little baked beauties take everything we love about omelets—flavor, flexibility, comfort—and package it into neat, grab-and-go portions. No flipping. No standing over the stove. No short-order cooking. Just whisk, pour, bake, and boom: breakfast is handled.
What makes this recipe especially magical is its adaptability. You can customize every single cup to match preferences, allergies, or moods. Ham and cheese? Classic. Veggie-packed? Fresh and light. Bacon and cheddar? Say less. You can make one batch that pleases everyone, which is basically kitchen sorcery.
Egg omelette cupcakes also shine in the meal-prep department. They reheat beautifully, store well, and taste just as good on day three as they do fresh out of the oven. Whether you’re feeding a family, prepping for the week, or just trying to eat something that isn’t toast again, these little guys show up.

👉 Are you a savory breakfast person or a “Diet Coke counts as breakfast” person?
No judgment. We just like to know who we’re cooking with.
Our family loves omelets in the morning for breakfast but we have a 14 year old who is always in too big of hurry to get to school or just can’t eat because it will make her sick!!!! So, I have been trying to find something that is delicious, quick and easy to throw at her as she runs out the door for school.
I think I will always make these little gems when I want a omelet because they are so fluffy and yummy( yes, fluffier than our pan omelets) and super easy. The fun thing is that everyone in the family can design their own omelet. You could also make a big batch and freeze them and throw them in the microwave one at a time, when your in a hurry.
