1/4 c. tomato paste
6 c. beef broth
1 c. grape juice
1 tbsp. Worcestershire sauce
1 tsp. dried thyme
2 bay leaves
1 lb. baby potatoes halved
1 c. frozen peas
Directions

Sear the Beef In a large Dutch oven over medium heat, heat vegetable oil. Add beef in batches, searing on all sides until browned, about 10 minutes total. Transfer to a plate.

Build the Flavor Base In the same pot, add olive oil, onion, carrots, and celery. Cook until softened, about 5 minutes. Season with salt and pepper. Stir in garlic and tomato paste; cook 2 minutes until fragrant and slightly darkened.
