We aren’t really camping people but we do love to Dutch oven cook! It seems like if it’s a special occasion, we whip out the Dutch ovens and cook something yummy!

At the end of May, two of my daughters have birthdays. Since we try to make their favorite on this day, this is what was requested.

We have been making this recipe since my older kids were little. There was even a time when I forgot plates and we used whatever we could. It makes memories, right?

This recipe is so simple but feels like you are preparing a gourmet meal. It has proven this over the years!

Instructions

    • Prepare coals for the Dutch oven
    • Light your charcoal or arrange wood embers until you have a bed of glowing coals.
    • Layer the bacon
    • Place bacon strips building a lattice pattern on the bottom of the Dutch oven. This not only flavors everything above it but also helps prevent sticking.
    • Add the chicken and ham
    • Nestle chicken pieces directly onto the bacon. Tuck the ham slices around and between the chicken so every bite has a smoky-sweet surprise.
    • Season
    • Generously sprinkle salt and pepper over the meat layers. Don’t be shy—it needs that seasoning to shine.
    • Build the veggie layer
    • Scatter diced onion and green pepper over the meat. Their juices will mingle with the bacon fat, creating a flavorful base.
    • Seal and cook
    • Place the lid on the Dutch oven. Arrange 8–10 coals beneath and another 8–10 on top of the lid (hot coals above and below ensure even cooking).
    • Cook time
    • Let it bake for about 1 hour. Peek in every 20 minutes to gauge color and juiciness.
    • Veggie finale
    • When the chicken is almost done—about 15–20 minutes before the timer dings—lift the lid and sprinkle mushrooms, tomatoes, and olives over the top. Replace the lid and finish cooking.
    • Check for doneness
    • Chicken should register 165°F internally and be golden-brown at the edges.
    • Serve
        • Spoon generous portions onto plates. Drizzle any pan juices over the top for maximum flavor

🍽️ Cooking Tips to Make It Unforgettable

  • Control your heat
Maintaining the perfect coal balance is campfire alchemy. Too many coals and you risk burning the bottom; too few and the chicken stays undercooked. Start with 8 coals on top and 8 below, then adjust as needed.
  • Let it rest
Give the Dutch oven a 5-minute rest off the coals before serving. This helps the juices redistribute and your meat stays moist.
  • Layer for success
Always put fattier proteins (bacon, ham) below leaner ones (chicken). That fat renders down, basting everything above in pure yum.
  • Use a charcoal chimney
If you’re new to coals, start them in a chimney starter. You get an even burn without the aero-foiled mess of lighter fluid.
  • Check early and often
A quick peek every 20 minutes keeps you in control. Never leave your Dutch oven unsupervised—you’re the guardian of greatness here.
  • Customize your size
Got a smaller or larger Dutch oven? Scale the recipe up or down. Just maintain roughly the same ratio of meat to veggies.
