Dutch Oven Teriyaki Chicken
Picture this: the sun is dipping low, your backyard smells like summer, and the grill is calling your name. But instead of struggling with flare-ups and burnt burgers, imagine tossing everything into a trusty Dutch oven, lighting some briquettes, and walking away for an easy hour of pure magic. That’s exactly what happened when I discovered this Teriyaki Pineapple Chicken recipe—a one-pot wonder that transforms humble chicken thighs into caramelized, saucy perfection topped with sweet rings of pineapple.
I’ll admit, I wasn’t always a Dutch oven devotee. In my early cooking days, I thought a Dutch oven was just a big, intimidating pot reserved for grandmotherly stews. Then one sweltering July evening, my bestie dared me to ditch the AC-blasting oven and fire up the coals for some outback-style cooking. I pulled out 3 pounds of juicy chicken thighs, a bottle of my favorite teriyaki sauce, a cup of brown sugar, and a couple of cans of pineapple rings—and the rest was history.
As the sauce bubbled and the sugar caramelized, my backyard smelled like a tropical luau. The chicken turned so tender that it practically begged for your plate, and the sweetness from the pineapple melded with the savory teriyaki in a way that felt like sunshine hugging your soul. Before I knew it, neighbors were peeking over the fence, lured by the aroma.
This dish is proof that quick weeknight dinners, birthday cookouts, or impromptu backyard feasts can all get an upgrade with just a handful of ingredients and a little Dutch oven know-how. So grab your coals, call your crew, and let’s dive into a recipe that’s as fun as it is flavorful
We love to go Dutch oven cooking on Sunday for family dinner! It’s so easy to head up the canyon and enjoy nature, good food, and my family! the best part is my kitchen stays clean! I have been craving this even more since COVID.
You can do Dutch oven cooking while your camping, picnic, or even in your backyard! Shoot, you can even throw this recipe in your oven at home! Super easy and so delicious!

Dutch Oven Teriyaki Chicken
Ingredients:
3 lbs chicken ( I use chicken thighs)
1 bottle Teriyaki Sauce
1 cup brown sugar
1 or 2 cans of pineapple rings
Dutch Oven Teriyaki Chicken
Directions:
- Marinate the Chicken
- In a large Ziploc bag or shallow dish, combine the chicken thighs and teriyaki sauce. Massage the sauce into every nook and cranny of the meat. Let it chill in the fridge for at least 1 hour, or up to overnight if you want that flavor turned up to eleven.
-
- Prep the Dutch Oven
Nestle your Dutch oven over a bed of hot briquettes (I like 10–12 coals underneath and 10–12 on the lid). Let it heat for a few minutes while you grab your brown sugar and pineapple. - Build the Layers
Remove the chicken from its marinade and pour the liquid into the Dutch oven. Arrange the thighs in a single layer. Sprinkle the brown sugar evenly over the chicken, followed by artful rings of pineapple. If you’re dreaming big, add a few pineapple chunks in between for extra bites of fruit. - Let the Magic Happen
Cover with the lid, top it with the remaining briquettes, and let the oven do its thing for about 1 hour. Avoid the temptation to peek—you’ll lose heat and slow down the caramelization process. After an hour, check that the chicken reaches 165°F internally and that the meat is no longer pink. - Serve & Adore
Carefully remove the lid (watch out for steam!), then plate the chicken, spooning the sticky sauce and pineapple over a bed of fluffy white rice. Grab your chopsticks or a fork—no judgment here—and prepare for bites of tender, tangy heaven.
- Prep the Dutch Oven
note:
If cooking at home, Preheat oven to 425 degrees and bake for an hour.

Cooking Tips
- Choose chicken thighs for unbeatable juiciness. If you only have breasts, just reduce the cooking time by 10–15 minutes.
- Marinate longer, taste stronger. If you have time, let the chicken bathe overnight in the teriyaki sauce. It’ll soak up more flavor and make your backyard taste like Bali.
- Preheat your briquettes for at least 15 minutes before you start. A consistent heat source is the secret behind that sizzling caramel crust.
- Don’t lift the lid too often! Every peek releases precious heat and slows the cooking. Trust your briquette stack and give it the full hour.
- Reserve that extra pineapple juice! After cooking, drizzle a bit over your rice for a zippy tropical finish. Don’t be shy—juice is flavor’s best friend.
- Add aromatics. Slide a few smashed garlic cloves or thinly sliced ginger under the chicken for a depth of flavor that’ll surprise everyone at the table.
- Crisp the edges. For a little textural drama, remove the lid in the last 10 minutes and move your briquettes to the bottom only. That direct heat crisps the sugar into golden, crackly bits.
- Double duty Dutch oven. After serving the chicken, toss in leftover rice, some frozen peas, and cheese, cover, and let it cook a few minutes for a one-pot fried rice finale.
- Use a chimney starter. Skip the lighter fluid and light briquettes cleanly with a chimney starter. You’ll taste the difference in every smoky bite.
- Keep your coals even. Rotate your briquettes halfway through cooking to maintain an even temperature and avoid hot spots.

Recipe Variations
- Spicy Sriracha Kick
Mix 2 tablespoons of sriracha into the teriyaki marinade before adding the chicken. You’ll get a sweet-heat tsunami that pairs perfectly with pineapple. - Hawaiian Luau Style
Add diced ham or cooked Spam cubes between the pineapple rings. It’s a nod to classic Hawaiian pizza—without the controversy. - Ginger-Garlic Glow-Up
Stir in 2 tablespoons freshly minced ginger and 4 smashed garlic cloves into the Dutch oven base. The result? A fragrant, Asian-inspired hug on your taste buds. - Coconut Rice Duo
Swap white rice for coconut-infused jasmine rice. Simply cook your rice in half coconut milk, half water. It’s like a mini vacation with every bite. - Sweet & Smoky Chipotle
Blend 1 teaspoon chipotle powder into your brown sugar topping. A whisper of smoke deepens the sweetness and makes this dish utterly unforgettable. - Teriyaki Tofu Twist
For a vegetarian delight, replace chicken with firm tofu cubes. Marinate, then bake in the Dutch oven until the tofu absorbs all that saucy goodness. - Mango Tango
Trade pineapple rings for diced mango. The juiciness of mango adds a fresh floral note that brightens the entire dish. - Curry Fusion
Before adding brown sugar, sprinkle 1 tablespoon of mild curry powder over the chicken. The curry’s earthy warmth elevates this recipe into surprising new territory. - BBQ Swap
If teriyaki isn’t your jam, use your favorite tangy barbecue sauce. Brown sugar and pineapple still work their magic, so expect a southern-style sweet-sour flavor. - Herbaceous Delight
Scatter fresh chopped cilantro or Thai basil over the finished chicken. The herb’s bright aroma cuts through the richness and adds a gourmet plating touch.
