Deep Dish Fruit Pizza

There’s something unapologetically indulgent about a deep dish fruit pizza. It’s like the fun cousin of traditional pizza—only this time, you’re playing with sugar, cream cheese frosting clouds, and vibrant fruit instead of mozzarella and pepperoni.

A crispy, buttery crust forms the base for a dreamy cream cheese-marshmallow filling that feels as light as a whisper, while your favorite berries, stone fruits, and tropical slices bring fresh, juicy bursts of flavor. Whether you’re hosting a summer brunch, celebrating a birthday, or simply need an excuse to bake something spectacular, this recipe has your back.

Growing up, fruit pizza always seemed like a VIP dessert—something reserved for backyard barbecues and special occasions. But why wait for a fete when you can whip one up any day? This deep dish version cranks the volume on the crust and gives you more room to showcase your fruit artistry.

The secret is a dough that’s part sugar cookie, part shortbread, with a tender crumb that holds up to the luscious filling. Once you master this foundation, the decorating possibilities are endless. Trust me, your guests will go wild over the visual feast and the sweet, tangy dance of toppings.

From mixing the batter to arranging the final fruit medley, baking this deep dish fruit pizza is as therapeutic as it is delicious. You’ll feel like an artist, an architect, and a pastry chef all at once. So tie on your apron, clear your kitchen counters, and prepare to channel your inner dessert diva. I’m about to share calorie counts, nutritional intel, pro tips, playful tweaks, and my sassy final thoughts—so let’s dive into the doughy good stuff.

We have a lot of family of birthdays to celebrate in May and May is the beginning of all that beautiful fresh fruit in the stores.  Cassie loves chocolate-covered strawberries for her birthday celebration. Jessica usually wants to try something new. We can’t have the same dessert for every celebration so we have to come with new ideas for each special person. Plus, we are getting all ready for family BBQ’s, hopefully, we will be able to do that soon!

This is such a quick and easy recipe and you will love it! So fresh and great for any family celebration.

Deep Dish Fruit Pizza

This is one of our earliest recipes on the blog! This is so darn good in such a devilish good way! You can make the crust and frost it with the frosting and then let everyone top their own piece with their favorite fruit or prepare it all beforehand and surprise your guests!

Cooking Tips

  • Chill the Dough Thoroughly A well-chilled dough is easier to press into the pan and holds its shape better in the oven. One hour in the fridge is gold.
  • Don’t Overbake Your Crust Keep an eye on that color. You want a light golden hue—not crisp brown—so it remains tender under all that filling.
  • Room Temperature Cream Cheese Softened cream cheese blends smoother with marshmallow creme, preventing lumps and guaranteeing the silkiest filling.
  • Lemon Juice: Small but Mighty That teaspoon of fresh lemon juice brightens the filling and counteracts the sweetness. Don’t skip it!
  • Spread with a Spatula, Not a Knife A flexible offset spatula gives you a flawless finish without tearing the crust or disturbing the dough base.
  • Decorate Just Before Serving Adding fruit too far in advance can introduce stray fruit juices that make your filling soggy. Wait until guests arrive.
  • Warm Your Spoon Run your serving spoon under hot water and dry it before slicing. It’ll glide through like a dream.
  • Coordinate Colors and Shapes Keep your fruit palette balanced—alternating reds, greens, yellows—for maximum visual impact. Think edible confetti.
  • Use a Nonstick Pan or Line It For an effortless release, either grease your pan well or line it with parchment paper that hangs over the edges.
  • Make-Ahead Strategy Bake the crust and store it for up to two days. Whip up the filling the morning of, then decorate right before your event.

Recipe Variations

  • Tropical Paradise Edition Swap traditional berries for diced pineapple, mango, and shredded coconut. Dust the fruit with a hint of chili powder for a sweet-heat twist.
  • Chocolate Berry Dream Stir ½ cup of cocoa powder into the dough for a chocolatey base. Top with strawberries, raspberries, and white chocolate shavings.
  • Mini Fruit Pizza Bites Press dough into mini muffin tins instead of a large pan. After baking, fill each cup with filling and a single berry for bite-size treats.
  • Nutty Banana Foster Drizzle a caramel sauce over banana slices and sprinkle chopped pecans on top. The marshmallow-cream filling pairs ridiculously well with this southern classic.
  • Citrus Zing Version Add orange and lime zest to the dough, and fold candied zest into the cream cheese mixture. Top with blood orange segments for drama.
  • Midnight Magic (Gluten-Free) Use a 1:1 gluten-free flour blend for an inclusive treat. Add a pinch of activated charcoal for a deep gray crust that makes jewel-toned fruits pop.
  • Strawberry Shortcake Mash-Up Fold chopped macerated strawberries into the filling before spreading. Top with a swirl of strawberry glaze.
  • Pecan Pie Inspired Mix ½ cup finely chopped pecans and a tablespoon of brown sugar into the dough. Garnish finished pizza with a drizzle of bourbon-spiced caramel sauce.
  • Red, White, & Blue Holiday Style Keep it festive with strawberries, marshmallows, and blueberries. Garnish with edible star sprinkles for Fourth of July perfection.
  • Herb-Infused Version Add a teaspoon of finely chopped fresh rosemary or basil into the dough. Top with peaches and a light honey drizzle for an adult-friendly spin.
