We love soup in the winter here. I’m not much of a snow and winter gal. I love the fall but one thing that keeps me going in the winter is all the good things like soup, hot cocoa.

I swear we have Christmas in the winter to help keep us happy and upbeat! I love all the stuff that comes with Christmas. When you are cold to your bones it’s hard to warm up and soup really helps with that!

Ingredients

  • 1 lb. chicken breasts
  • 1/2 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 4 cups chicken broth
  • 3 tablespoons cornstarch dissolved in 2 tablespoon water
  • 2 – 12 oz. cans evaporated milk
  • 2 lbs. of gnocchi or 4 cups
  • 8 slices of bacon
  • 2 cloves of garlic, minced
  • 2 cups fresh baby spinach

Directions

  1. Place the chicken, carrots, celery, onions, basil, Italian seasoning, poultry seasoning, salt, and broth in a crockpot or slow cooker. Cover and cook on high for 3-4 hours or low for 5-6 hours. Shred the chicken directly in the crockpot.
  2. Add the cornstarch mixture, evaporated milk, and gnocchi. Stir and replace cover. Cook another 45 minutes – 1 hour until the soup has thickened and the gnocchi has softened.
  3. While the soup is thickening, cut the bacon into small pieces and fry until crispy. Drain on paper towels and wipe most of the bacon grease out of the pan, leaving just a little bit for the spinach/garlic. Add the garlic and sauté for one minute. Add the spinach and stir until wilted. Remove from heat. Add the bacon and spinach to the crockpot. Stir to combine.
  4. Add any additional liquid as needed and season again with salt and pepper as needed.

👩‍🍳 Cooking Tips for Gnocchi Glory

  • Don’t overcook the gnocchi — they only need a few minutes; overcooking makes them mushy.
  • Use evaporated milk — it’s creamy without being heavy, and less likely to curdle than regular milk.
  • Bacon first, always — cooking the bacon first means you get that magical base flavor from the drippings.
  • Spinach last — add it right before serving to keep it vibrant and fresh.
  • Make it ahead — cook everything except the gnocchi and spinach, then add those when reheating.

💬 Reader prompt: Do you like your soup thick and stew‑like or a little more brothy?

🎨 Recipe Variations

  • Mushroom Magic — add sliced mushrooms with the veggies for extra umami.
  • Herb Swap — try thyme and rosemary instead of basil and Italian seasoning.
  • Cheese Lover’s — stir in Parmesan or Asiago at the end for extra richness.
  • Low‑Carb Twist — use cauliflower gnocchi or diced zucchini instead.
  • Spicy Kick — add red pepper flakes or a pinch of cayenne with the seasonings.

🧒 Kid Tips

  • Cut gnocchi in half for smaller bites.
  • Keep the spinach minimal or chop it finely for picky eaters.
  • Let kids sprinkle the bacon on top — they’ll feel like part of the cooking team.
  • Serve with breadsticks for dipping (and to keep them busy while it cools).

💬 Reader prompt: Parents — do your kids fish out the gnocchi first or go for the bacon?

🛒 Grocery Hacks

  • Bacon — cook extra and freeze crumbles for quick toppings.
  • Gnocchi — shelf‑stable gnocchi lasts for months in the pantry.
  • Spinach — buy pre‑washed baby spinach to save time.
  • Chicken — rotisserie chicken is a huge time‑saver here.
  • Evaporated milk — stock up during sales; it’s a pantry MVP for creamy soups.

💭 Final Thoughts

💬 Reader prompt: If you could add one “surprise” ingredient to this soup, what would it be?

Some soups are just soups. This Creamy Chicken Bacon Gnocchi Soup? It’s a whole mood. It’s the smell of bacon sizzling in the pot, the sight of steam curling up from a creamy bowl, and the joy of that first spoonful when you get a little bit of everything — gnocchi, chicken, spinach, and that dreamy broth.

I love that it’s flexible — you can keep it classic, add veggies, or swap cheeses. It’s forgiving, too; even if your gnocchi are a little overcooked, it will still taste like something you’d proudly serve to guests.
