Cajun Chicken Pasta

Picture this: it’s a warm summer evening, the crickets are chirping, and my kitchen smells like something that belongs in a five-star bistro. But I’m not in Paris—I’m at my kid’s birthday dinner negotiation table. Every year my youngest refuses the usual birthday fare. One year it was sushi tacos. Another year it was mac ’n’ cheese enchiladas. This time? Cajun Chicken Pasta.

I’ll admit, I hesitated. I’m the reigning queen of mild dinners, the undefeated champion of “Hold the Heat.” But when Ben gave me those big puppy-dog eyes that scream, “Mom, this is the one,” I folded faster than a deck of cards at poker night. And friends, I’m so glad I did. Because one bite of this creamy, spicy, Parmesan-topped pasta and I was swept off my feet.

This dish is like your favorite alfredo sauce decided to throw a Mardi Gras parade in your mouth. It’s upholstered in a velvety sauce, studded with juicy chicken, dressed up with fresh tomatoes, and showered in Parmesan. The best part? You’ll have it on the table in just 30 minutes. That’s faster than arguing with your teenager about bedtime.

Whether you’re celebrating someone special or just craving a weeknight pick-me-up, this Cajun Chicken Pasta has your name written all over it in bold, spicy letters.

Cajun Chicken Pasta

It’s delicious like your favorite creamy alfredo sauce but it’s kicked up a notch with Cajun chicken topped with fresh tomato bites and covered with Parmesan cheese.

The flavor combination is magical, and it’s done in 30 minutes.  What!/?! Nothing that tastes this good should be this easy!

Cajun Chicken Pasta

INGREDIENTS:

    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil, divided
    • 2 tablespoon cajun seasoning ( we used slap ya mama cajun seasoning)
    • 8 ounces penne pasta
    • 2 tablespoons butter
    • 3  to 4 cloves garlic, minced
    • 1 cup heavy cream, or more, to taste
    • 1 1/2 teaspoon lemon zest
    • 1/4 cup freshly grated Parmesan
    • 1/4 cup Mozzarella cheese
    • salt and black pepper, to taste
    • 2 tomatoes, diced
    • 2 tablespoons chopped fresh parsley leaves

DIRECTIONS:

  • Season & Shake
    1. In a gallon-size Ziploc bag, combine the chicken, 1 tablespoon olive oil, and Cajun seasoning. Zip it up and shake until every inch of chicken is luxuriously coated in spice. Pro tip: the noise from shaking this bag is the official soundtrack of “Dinner’s about to get lit.”
  • Sear & Rest
Heat the remaining tablespoon of olive oil in a grill pan over medium-high heat. Place the seasoned chicken breasts in the pan and cook for 5–6 minutes per side, flipping once, until they’re cooked through and gloriously charred. Transfer to a plate, cover with foil, and let them rest while you work your pasta magic.
  • Pasta Perfection
Bring a large pot of salted water to a rolling boil. Add the penne and cook according to package directions until al dente. Drain and set aside, because this pasta is about to get sauced.
  • Sauce It Up
In the same large pot (because less cleanup is the ultimate win), melt the butter over medium heat. Add the garlic and cook, stirring, until it smells like heaven—about 1–2 minutes.
  • Cream Dream
Slowly pour in the heavy cream, whisking constantly. Stir in the lemon zest for a surprise burst of brightness. Let the mixture bubble gently for 1–2 minutes until it starts to thicken.
  • Cheese Please
Stir in the Parmesan and Mozzarella until the sauce is smooth and slightly voluptuous—about another 1–2 minutes. Season with salt and pepper to taste. If it feels too thick, add a splash more cream. You’re the boss of this sauce.
  • Toss & Top
Add the drained pasta, gently folding until every noodle is coated in that creamy goodness. Transfer to plates, slice the chicken on the diagonal, and nestle it atop your pasta. Scatter the diced tomatoes and parsley leaves for color, freshness, and that gourmet aesthetic.
  • Done & Delicious
  • Grab a fork, close your eyes, and savor every bite of this 30-minute wonder.

Cooking Tips

  • Use room-temperature chicken. It cooks more evenly and prevents that dreaded dry center.
  • Let your chicken rest! Resting for 5 minutes retains all the juicy goodness.
  • Don’t skimp on seasoning. Taste your cream sauce before adding pasta, and adjust salt, pepper, or a pinch more Cajun seasoning if you need an extra kick.
  • Freshly grate your cheeses. Pre-shredded cheese has anti-caking agents that can affect melting.
  • Save a splash of pasta water. If your sauce thickens too much, a tablespoon of starchy pasta water brings it back to silky perfection.
  • Keep an eye on the garlic. If it browns too quickly, it can turn bitter—just 1–2 minutes in the butter is all you need.
  • Swap a portion of the cream for Greek yogurt. You’ll add tang and cut the saturated fat without sacrificing creaminess.
  • Use a heavy-bottom pot. It distributes heat evenly, preventing hot spots that scorch your sauce.
  • Lemon zest is your secret weapon. Microplaned zest brightens the sauce and balances the cream’s richness.
  • Warm your plates. A quick spin in the microwave warms dinnerware and keeps your meal hot from first bite to last.

Recipe Variations

  1. Spicy Cajun Shrimp Pasta
Swap chicken for shrimp—season and sear 1 pound of peeled, deveined shrimp for 2 minutes per side. Same sauce, double the briny fun.
  2. Veggie-Loaded Dream
Stir in roasted red peppers, wilted spinach, or sautéed mushrooms. You’ll boost the nutrition and add layers of flavor.
  3. One-Pot Wonder
Cook pasta directly in the cream sauce—add 1½ cups of broth to the cream, then pasta, and simmer until al dente. Saves time and cuts dishes!
  4. Zoodle Swap
Swap penne for zucchini noodles to make this dish low-carb and gluten-free. Sauté zoodles for 2 minutes before tossing in the sauce.
  5. Smoky Bacon Twist
Crisp up 4 slices of bacon, crumble them over the finished pasta, and stir 1 tablespoon of bacon fat into the sauce. Yes, it’s as epic as it sounds.
  6. Sun-Dried Tomato Bliss
Finely chop sun-dried tomatoes (oil-packed for extra flavor) and fold into the sauce. You’ll get bursts of tangy sweetness in every bite.
  7. Creamy Pesto Kick
Swirl in 2 tablespoons of basil pesto after adding the cream. The bright herb notes give your Cajun dish an Italian-fusion flair.
  8. Cheesy Four-Way
Replace the Mozzarella with sharp cheddar and add 2 tablespoons of cream cheese. You’ll up the tang factor and make every bite more gooey.
  9. Lemon-Garlic Explosion
Double down on lemon zest and juice—add 1 tablespoon lemon juice for extra zing that cuts through the richness.
  10. Family-Style Bake
Transfer everything into a baking dish, top with Panko breadcrumbs mixed with olive oil, and broil for 2–3 minutes until golden. Crunchy meets creamy in pure harmony.
