I’m really on the one pan wonder train this week! Cooking can’t get any easier! I used to think that going through the drive thru was such a easy way to get dinner on those busy nights but this recipe has proved me wrong!

Don’t get me wrong, some nights it’s great to roll up to McDonalds and grab a tasty Double Cheeseburger and fries, but me and my husband have come to the conclusion that nothing compares to home cooking! Especially when you throw everything in one pan and the magic happens in the oven!

Ingredients

  • 2½ pounds boneless skinless chicken thighs, or chicken breasts
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 3 tablespoons ketchup
  • 1 teaspoon ground ginger
  • 2 to 3 garlic cloves, minced
  • 1 tablespoon cornstarch
  • pineapple rings, drained
  • green onions, for garnish

Instructions

  1. Preheat the oven to 375 degrees.

  2. Place the chicken thighs in a single layer into a baking dish.

  3. In a saucepan, whisk together your pineapple juice, soy sauce, brown sugar, ketchup, ginger, garlic, and cornstarch. Heat over medium heat until it starts to thicken. Remove from the heat and reserve 1/4 cup of the marinade for later.

  4. Pour the remaining sauce mixture over the top of chicken thighs.

  5. Bake in the preheated oven for 35-40 minutes or until the chicken reaches 165 degrees.

  6. Arrange the pineapple slices on top of the chicken. Brush the reserved marinade on top of the pineapple rings and chicken thighs.
