I guess we are on a taco kick this week! I mean, can you ever have too many tacos? Am I right?!?  It’s so funny because when I first was married all we made was hamburger tacos, which is still my husband’s favorite. Don’t get me wrong, they are good but I think it reminds him of being a kid.

 

I seriously love these tacos! The crispy taco shell, flavorful chicken and it’s topped with a zesty sweet slaw. It really hit it’s mark! I wanted to lick the plate!

 

BONUS: It’s a really quick recipe and easy to make! I love that these would be so perfect for any party, and I swear kids will eat their dinner better when you present it in mini sizes.

 

 

Chicken Wonton Tacos

Chicken Wonton Tacos

Ingredients

  • Chicken
  • 2 chicken thighs, finely diced
  • 1 tsp sesame oil
  • 1 tbsp. soy sauce
  • 2 to 3 cloves garlic, minced
  • 1 tsp minced ginger
  • Asian-inspired slaw
  • 1 small bag coleslaw
  • 4 to 6 green onions, thinly sliced
  • 1 tsp sesame oil
  • 1 tbsp. soy sauce
  • 1 tbsp. honey
  • For tacos + toppings
  • 16 Wonton wrappers
  • Sweet chili sauce
  • Chopped cilantro, optional
  • Sesame seeds

Instructions

  1. Preheat oven to 375 F. Spray wonton wrappers with cooking spray or brush with a bit of olive oil, then drape over the side of a 9×13 baking dish ( if you have a lip on your baking dish, it will give your shells a bigger opening, a little easier to fill). Bake for 7-8 minutes, watching closely closely so they don't burn.

  2. Mix diced raw chicken in a large bowl with sesame oil, soy sauce, garlic and ginger. Heat a large skillet over high heat and sauté chicken for 7-8 minutes, tossing frequently until cooked through.

  3. Meanwhile, mix ingredients for coleslaw together in a large bowl.

  4. Add chicken mixture to wonton shells, then top with coleslaw, You can place sweet chili sauce in a small bowl for dipping and sprinkle with cilantro and sesame seeds. Serve and enjoy!
