ingredients

  • 800 grams lean beef, I used Milanese it worked great
  • 90 ml soy sauce, divided
  • 1 teaspoon black pepper
  • 30 grams corn starch, divided
  • 5 grams baking soda
  • 120 ml water
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin
  • 1 tablespoon sugar
  • 2 garlic cloves, minced
  • 1 medium green bell pepper, chopped
  • 1 medium white onion, chopped
  • white rice to serve with it
  • 2 tablespoons olive oil

Directions

1. Prep the Beef
In a medium bowl, toss thinly sliced beef with 30ml soy sauce, black pepper, 25g cornstarch, and baking soda. Massage with your hands until coated. Let sit while you prep everything else. This tenderizes the meat and helps get that glorious crispy edge.
2. Sear the Meat
Heat 1 tbsp olive oil in a large pan or wok over medium-high heat. Add beef in a single layer and cook until brown and crispy—about 3–4 minutes per side. Don’t overcrowd; do it in batches if needed. Remove from pan and set aside.
3. Sauté the Veggies
In the same pan, add the remaining 1 tbsp olive oil. Toss in garlic, onion, and bell pepper. Stir-fry until soft and fragrant, about 5–6 minutes.
4. Make the Sauce
In a small bowl, whisk together remaining 60ml soy sauce, water, oyster sauce, hoisin sauce, sugar, and remaining 5g cornstarch. Mix until smooth and lump-free.
5. Bring It Together
Pour the sauce mixture into the pan with sautéed veggies. Add the crispy beef back in and stir everything together. Cook over medium heat, stirring constantly, until the sauce thickens into a glossy glaze that coats everything.
6. Serve It Up
Spoon beef and veggies over a fluffy bed of steamed rice and serve hot. Sprinkle with chopped green onions or sesame seeds if you’re feeling extra fancy.
