Crockpot Beef and Broccoli
This Crockpot Beef and Broccoli Recipe requires just 10 minutes of hands-on prep, and the slow cooker does the rest of the work for you.
We’ve loved this recipe for a long time, we decided to make this for the kids and they actually loved it. Sometimes we wonder if Ellie is a vegetarian because she won’t eat meat a lot of times. She ate this so easily, it was crazy. Give this recipe a try if you need something quick easy and delicious.
Ingredients
- 2 lb. boneless, beef chuck roast, sliced into thin strips
- 2 cups beef broth
- 1 cup soy sauce
- 2/3 cups dark brown sugar
- 2 tablespoons toasted sesame oil
- 6 garlic cloves, minced
- 1/4 cup cornstarch
- 3 cups fresh broccoli chopped
- White Rice, cooked
Directions
- Whisk together beef consume, soy sauce, dark brown sugar, sesame oil, and garlic in the crockpot.
- Gently place your slices of beef in the liquid and toss to coat.
- Turn crockpot on low and cook for 5 – 6 hours.
- After 5 – 6 hours of cooking take out 1 cup of the cooked sauce from the crockpot whisk in the cornstarch to create a slurry. Then pour the slurry into the crockpot and stir well. Cook on low for 30 minutes more to thicken up the sauce.
- Bring one inch of water to a boil in your pot.
- While you’re waiting for your water to boil, use a knife to cut the head of broccoli into florets.
- Add your steamer basket to the pot and place the broccoli florets on the steamer. Reduce the heat to medium, add lid and steam and 6 to 8 minutes.
- Add your broccoli directly to your meat, or on top of your meal.
