I was looking for a pineapple recipe that I could share with you because we don’t have a lot of pineapple recipes on the blog. I found a lot of beautiful recipes that featured pineapple that were light and creamy. They looked incredible!!! But when I started exploring this recipe, I really didn’t know how it was going to turn out  because it was flavors that I usually don’t play with.

 

I’m here to tell you that it’s incredible!!! My husband isn’t a pineapple, coconut fan usually and he couldn’t stop eating this! It’s so easy to make and it’s “moreish”!

 

 

 TIPS AND TRICKS

  • HOT OR COLD? I love this warm but it’s equally delicious cold.
  • FRESH OR CANNED? Canned works the best but you can use fresh!
  • BREAD OR ROLLS? It doesn’t really matter what you choose to use but I love to use a heavy bread product. In this, I used bakery hot dog buns and it worked great!
  • STORAGE: Leftovers will stay good in an airtight container.

 

 

Pineapple Bread Pudding

Pineapple Bread Pudding

Ingredients

  • 1/4 c butter, softened
  • 3 oz. pkg. instant cream cheese pudding
  • 4 eggs
  • 2 c milk
  • 1 c heavy cream
  • 8 oz. can tidbits pineapple, drained
  • 2/3 c flaked coconut
  • 2 tsps. vanilla
  • 8 to 10 day old hard rolls, pulled into bite sized pieces

Instructions

  1. In your large mixing bowl, cream together butter, dry pudding mix until fluffy.
  2. Add eggs, one at a time, beating well after each addition. In another bowl combine milk, heavy cream, drained pineapple, coconut, and vanilla.
  3. Using a wooden spoon, blend milk mixture into creamed mixture.
  4. .Fold in hard rolls pieces. Pour into an greased 2 quart casserole of 9-inch square baking dish.
  5. Bake in 325 degree oven for one hour and 15 minutes for the casserole and about one hour for square dish or until knife inserted off center comes out clean.
