I’m shocked we haven’t done Hawaiian Haystacks before now because I love them! I had all of the ingredients already at the house and sometimes I like to do Shelftember like on Fun, Cheap or Free.

We have so many ingredients that just sit in our pantry, either because I forget what I was going to make or I ended up not making it and decided to make something different. Anyways, Hawaiian Haystack Casserole was the perfect dinner for us last night! We even have some leftovers for dinner today! 

 

 

 

Ingredients

  • 3 cups diced rotisserie chicken
  • 10.5 oz cream of chicken soup can use low-sodium 
  • 3 cups cooked rice
  • 1/2 cup sliced almonds or slivered almonds
  • 1/2 cup light sour cream
  • 3/4 cup diced celery
  • Pineapple tidbits
  • black olives, sliced
  • Chow Mein noodles
  • salt and pepper to taste

 

 

 

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients into a greased 9×13 baking dish
  3. Mix up the chicken, cream of chicken, cooked rice, almonds, sour cream and celery ingredients right in the baking dish.
  4. Bake for 30 to 40 minutes or until casserole is heated through.
  5. Put the remainder of the ingredients on top. You can add any other toppings you like with your Hawaiian haystacks.
