Pico de Gallo
We had taco’s for dinner the other night, and we have lots of tomatoes! Quick Pico de Gallo was the perfect compliment to the tacos!
We have the so many tomatoes from our plant, honestly I’m shocked we got that many tomatoes this year. We have not had very good luck in the last couple of years. Now we have them coming out our ears.
Matt made salsa, marinara, BLT’s and so much more. The other night we were having tacos and it was perfect. I love having everything you need to make something new. This was awesome! Try it!
- 3 or 4 large tomatoes
- 3 cloves of garlic minced
- juice of 2 limes
- 1/2 cup of cilantro, minced
- 1 small white onion
- 1 small jalapeno
- salt and pepper to taste
- Place tomatoes, garlic, cilantro, onion, and jalapeno in a bowl. Squeeze the lime over the top of the tomato mixture and then salt and pepper to taste.
